Healthy Eggplant Parmesan | No Frying | No breading | Lighter Eggplant Parmesan

    This healthy Eggplant Parmesan Recipe is one of my favorite ways to eat eggplant. No breading, no frying, just eggplant, cheese and marinara.
    Healthy Eggplant Parmesan | No Frying | No breading |Lighter Eggplant Parmesan
    Ingredients
    2 large eggplants sliced ¾ - 1 inch thick
    1 cup tomato sauce - Rao's
    1 ¼ cups low fat mozzarella cheese
    1 tsp dried basil leaves
    Avocado spray
    2 tbsp parmesan cheese
    1 tsp salt
    1 tsp garlic powder
    2 tbsp fresh parsley
    Instructions
    1. Preheat oven to 400°F
    2. Slice eggplant into ¼-1 inch thick slices
    3. Lay them out in a sheet pan
    4. Spray avocado oil and season with salt
    5. Flip , spray and season with salt
    6. Bake 20 minutes, turning halfway through until eggplant is golden
    7. Layer tomato sauce on the bottom of a baking dish
    8. Even layer eggplant over the sauce and sprinkle with cheese, dried basil leaves, parmesan cheese and tomato sauce
    9. Repeat the process as you desire
    10. Bake for another 5-10 minutes until cheese is melted and everything is bubbling.

    great job, how did you make them so lite and fluffy wo 'salting them beforehand' to get moisture out? no eggwash/crumbs either?

    Those canned oysters have propellant in them and it’s not healthy you can just get a regular bottle spray add oil to it it’s a lot healthier. Thanks for sharing

      @@starseyes2696 yes I assume earlier comment was about canned oil spray lol because they suggested to use a spray bottle and add oil !
