After many years of wanting to do such a video, we finally had the opportunity to show you how one of Canada's most well-known exported products is made: Maple syrup. Canada produces around 80% of the world's maple syrup, and maple syrup is considered a luxury food item internationally. The traditional originates from the Aboriginal Peoples, who taught first settlers in Canada how to make maple syrup with tools made of birch and iron.
In this episode, we join the Garland family on their century-old farm where they gather maple sap from trees in the area and transform it into delicious liquid gold. Their farm is located in the bilingual region of Eastern Ontario, near Ottawa. They have been collecting maple sap throughout generations, first using the traditional method of spile and bucket and boiling the sap down on a box stove, and now modernizing their process to use pipelines and an industrial-grade evaporator. They currently have approximately 4,200 taps and are working their way up to a large-scale product of 10,000. The process involves collecting the sap, then boiling it down to a thick syrup, and refining it into an edible product. The most surprising part of the process was that maple sap actually carries lots of natural, gritty sands that need to be filtered out. How long does the process take? Well, we were there for about 16 hours to film, and Ivan was still working hard after we left at 1:30am on the same batch. Although the concept of the process is simple, it is hard-work requiring plenty of supervision and technical knowledge.
What does maple syrup taste like? In Europe, the type of tree syrup mainly produced is birch syrup...which allegedly tastes "more like medicine". Maple syrup tastes very sweet, but has a nice smokey flavour. It's great for dressing pancakes, waffles, meats (such as bacon), and is quite versatile in baking. Did you know that, unlike other syrups and sugars (brown sugar, corn syrup), maple syrup is actually good for you? It carries minerals such as: calcium, magnesium, manganese, zinc, potassium, and iron among others. Other sugars offer little to none of this nutritional value.
Maple syrup is used to make soft candy, maple butter, maple jelly, maple popcorn, maple sorbet, maple cones, maple tarts, and maple cotton candy. It can be used in place of regular sugars as a sweetener in baking or drinks, and has lower glycemic load than brown sugar. It's basically a super food! One that tastes great.

All that pure water they filter out, is the same type of water used in places that make computer parts etc. Pretty sure it's not safe to drink, but great for cleaning.
its perfectly fine to drink, its just pure h2o. The only problem comes from consistently drinking it. Because its pure water and doesn't have any minerals the body tries to create an equilibrium between minerals and h2o and then your cells will swell trying to compensate for the excess of h20 and lack of minerals. So its fine to drink a little bit but it cant be the only source of water you drink or you'll basically explode your cells.

Much more than learning how maple syrup is made I was overwhelmed with the cleanliness of the whole place. How do they keep it so so spotlessly clean. Love listen I don't give a flying fuck if people make their business around it but I'm highlighting the fact that the traditional way of doing maple syrup probably isn't the best way and in many cases the "classic way" isn't always the best in some cases it's not even a decent way I'm not entirely saying that maple syrup the classic way isn't a good way since you know it's fucking tasty nonetheless but he shouldn't be insulting maple syrup producers who thought ahead and decided to mass produce high quality maple syrup and recicle the water too.
I'm going to give you an example of how the "classic way" in many cases by today's standards isn't even a good way.
Vaccines used to contain a certain virus from cows that would help humans develop antibodies for a specific disease which I cannot remember the name of but there was no quality control and no realistic testing done by today's standards so it wasn't even a good way (again by today's standards) they weren't entirely sure how a human would react to it.
Now look at how heavily regulated vaccines are by the government and the way they're made now is one heck of an amazing way, we don't say "oh we should boycott those who advance with technology because they aren't doing it our way we should go back to the time where vaccines were just introduced you know that's the best way or fuck you"

I am Japanese. About 30 years ago, I went to the United States only once for work and ate pancakes with real Canadian maple syrup. Very good aroma and moderate sweetness were very impressive. It is only recently that real maple syrup has become available in mail order in Japan. I want to see your map and taste the real maple syrup.
Being in the food business myself I have to tell you guys, You run an absolutely beautiful, clean, operation and I'm sure your syrup is delicious!

Family-owned, nice to the trees, honest to goodness pure maple syrup and none of the rubbish in everything else in this life today. every year we'd make maple syrup on my grandfather's land.. such great memories.. he had about 80 acres & we'd tap various trees out in the woods.. & then process it in one of his large sheds.. he had a big wood burning furnace in the one shed.. you could literally park a John Deere A in there... with room to spare..

If you live in the US, the reason maple syrup is so expensive here is due to the tariffs and up charge from Canada.
@@AJ-ox8xy There is alot of American made maple syrup and it's still expensive. Canada is not the only country that makes maple syrup. Its the process.
@@stevenhagen7320 depends on the state and what you define as expensive. If you live in the North where maple syrup can be made from the surrounding farms then it will be substantially cheaper than buying syrup made in Canada due to the tariffs. If you live farther south like I do then yes Syrup is on average about the same price from Canada as it would be from the north part of the US, due to shipping expenses.
The fact is that most Syrup as a general rule in the US is from Canada as that is one of our number one imports from the country. There is also other factors that increase the price. Another primary is that people value real maple syrup. People are willing to pay 20$ to even 50$ for a decent amount of syrup and therefore the market has no reason to drop the price established by the Canadian syrup.

What I got was the most sophisticated and complex hydro-extraction, distillation and filtration setup I've ever seen... Which is as Green & Energy conscious as imaginable, reusing the filtered water for cleaning the equipment and facilities and using the Maple branches for heating/distilling the sap into syrup... Absolutely incredible.

I have tasted their syrup, in fact have some of it in my kitchen now and it is excellent! It was a gift someone had brought for me. I am pleasantly surprised to see them on CZcams now I know where my bottle of syrup came from. I never use anything but pure maple syrup, I think it is much better than the artificial stuff.

As someone who loves Maple syrup I thank you guys for putting all that effort and hard work to make Maple syrup for us.

@@shade4416 Well, it's basically 99-98% water and 1-2% sugar. So it taste the same as if you put 1 spoon of maple syrup in a 2 little bottle of water... If you have the chance of visiting one ask them if you can try their fresh maple water, then syrup (of course), toffee and butter. Your taste buds will thank you!

The trees make sap and we have to boil it for a couple hours and cool it down then it will become maple syrup.
