      highup3007 Too watery. You'd need to thicken up the base a considerable amount. Which I'll probably do anyway when I make this. :p

    I made this recipe but changed it a little with 1/2' cubed potatoes that got cut into slices at that size by accident.
    I also added canned chunky crab. I cooked the crab and the clams in butter in a separate pan and put that into the broth. I then pan fried the bay scallops in butter and lemon juice for about 2 minutes and put them in the broth. I chopped finely, green onions too and put those late into the broth and as an after-bowled sprinkle.
    The flavor was outstanding! I couldn't have done such a great Chowder without your recipe and demonstration. The wife loved it very much.

      its a chowder, its supposed to be white, creamy, not soupy, watery, and yellow. he done fucked with a very well respected hearty maritime dish. if I served this in my kitchen my boss would have a fit if I told him it was chowder.

    Out in the Seattle area, we see tan chowder a lot. I tend to associate the pure white stuff with Campbell's cans.

    the questionable appearance is the white bowl. put the same chowder in a greenish or blue-sh bowl and it will look more traditional and appetizing white. having the perfectly white bowl gives the eye a reference point to compare it to. taking that away the chowder will look less dingy.

      So funny. I was going to make the same comment. I think, though, that having that tiny pop of red with the Fresno chilies, I would go with a red bowl.

      While I agree the color of the bowl could help some, I think another issue is the color of the broth next to the color of the potatoes. I think another way to improve the appearance would be to create a more uniform appearance in the chowder texture/color. You could pull out and resave the bacon before adding the onions, and at the potato step, add half as many potatoes, and then blend the sauce into a purée, and then follow remaining steps as normal. Add bacon back, add fresno chiles and then maybe go a tad light on the cream before finishing with the scallops. I think the colors of the bacon, chiles, and herbs would pop more if there wasn't as much of a mixture of beige in the bowl. If the beige base was more uniform, it might be less distracting.

      I agree but this is the Internet and it's pointless (or futile... never get to use that word :D) telling people to be nice on the Internet. They come on for the anonymity and possibly to express/say things they want openly. A lot of them are trolls though so it's just best to ignore them and not let them get the attention they're looking for.

    Made this yesterday, turned out to be so so good!!! I made a couple of small changes: cooked the bacon on low, replaced clam juice with fish stock and thyme for tarragon

    Hi Chef John! I follow you all the time and have made many of your stuff! I love it! To this recipe I added dried basil and not chili pepper but a tad of orange and red peppers and fresh parsley and dill. So good!

    I made this. I tweeked it a bit. I added an additional 8 oz of clam juice...plus 2 tbsp. of butter. FANTASTIC!

    Scallops and bacon in the same sentence can't be anything less than divine.
    Serve it in a blue bowl, and the contrast will make it look a pure pristine white.

    John, when I was a kid, I was told there was white, red and brown chowder. The brown was new, but it was what my mum liked. Unfortunately, the restaurant that served it disappeared in our seasonal town, but the proprietress informed us that the brown, like yours was a truly, properly curated chowder. I'd rather have that than a bowl jammed full of flour. Keep chowdering.

    For a relatively easy fix to the coloration issue, don't serve it in a white bowl, bread bowl or other options would work well for it. Having the white of the bowl right next to it, well, points out that it is further from the white you would think of.

      I find the odd inflection in his voice hard to take though. I've never heard an English speaker put such a dominant upward inflection near the end almost every sentence. It's unnerving to me and I have to turn the volume off, sadly, because he has alot to offer.

    It looked way good. I could smell the bacon and taste the scallops. I have added kernel corn, and or frozen peas and carrots to brighten the colors up in the past with good results. Mushrooms and pearl onions are delicious in chowder as well.

    I usually use unpeeled red potatoes for my “chowdas”, still good texture, and flavor. Color contrast is good as well.
