I tried making Alvin Zhou's 100 Hour Fudgy Brownie...here's how it went!

She should've added at least an ice cube. He adds the ice cube so the butter can get the water back. When making brown butter the water evaporite

I agree. If I remember correctly, Alvin used a coffee ice cube instead of just water like in his cookie recipe. I don't think it would have taken anything away from the flavor of the butter.
@@VeronicaBaughman it doesn't have made the brownies 2 or 3 times and it just tastes like brown butter with roasted espresso smells extremely nice and adds a lot of flavour so for me she failed once she used less esresso and no ice cube. At that moment it was a different brownie and youd probably not need to wait as long with her brownie since the extreme amount of time is used to mellow out the flavors (the batter tastes a lot like coffee but the finished version only a nice little bit making it really rich willst not too sweet) btw she even used other chocolate than in the recipe... As in wrong cacao percentages.

Your brownies ended up way thicker than his since he used a bigger pan lol Yeah the 9x9 fit in okay but its obvious that your brownies ended up being thicker because it wasn't spread out as much

Would you cut down the chocolates at least 1/2?
I think the amount of chocolate is actually fine - it’s what adds to the gooey-ness! If I made it again, I might switch out some chocolate chips for white chocolate or maybe add some pretzels for saltiness and to cut the sweetness

Baking is a science if you did any step / ingredient differently you can't really compare it with the original. It's not the same unfortunately.
