Hello ah pa, I have been following your videos and I will be making fish head beehoon soup for my hubby, some videos I watched, fish head needs to be coated with cornstarch before frying. But you didnt put cornstarch, should I put apply before frying to achieve milky soup?
If it’s for soup, I won’t coat with starch, if it’s for stew, then yes. I prefer my soup to be more watery. If u starch ur fish, then some of the starch will release into the soup too

Not recommended to use ginger powder here, if dun have ginger, perhaps u can add some fried garlic

U can also use pork or chicken broth

so meaning combined chicken or pork broth with fish bone soup? Will this so call superior soup ( 上湯 ) those like biz do?
@@dhdj753 each broth has their own flavours, they r all good 上汤 by their own
@@dhdj753 some will mix, for example the Singapore prawn mee, they will mix prawn broth with pork broth
