- Overnight (or not!) brioche cinnamon buns: Kids rave! Adults go wild! These brioche cinnamon buns can be made a day in advance, tucked in their pan, stuck in the fridge, and baked the following morning (such a fun treat to wake up to!) or made entirely the same day. Nothing like a homemade cinnamon roll! And is there anything better than cream cheese icing?

Adding butter to the filling makes it impossible to spread evenly on tender dough. Spread real soft butter on dough followed by dry ingredients. Great recipe. Great cookbook. Very no nonsense.
