I love the technique of cutting a laminated strip, and then spinning them together. I have a 40% butter brioche cold proofing right now. Wasn't sure what I was going to do with it. Cinnamon buns it is. Look forward to trying the technique!
First one is how my grandma made them. Corkscrew twist and then snail shell shape. Only either slightly smaller one. OR a bigger, flatter and more oval shaped one, about the size of a woman's hand.
Okay but how did you get the dough so solid and strong? I tried to do this and my bun dough just ripped and stretched super long, in the oven it all became one big ball of bread. Pls help I want my buns to be all nice like this video❤
when the dough rips apart it means either you over mixed or under mixed the dough. Also check your amount of butter in the dough. Thanks very much for watching! :)

Now that i learned making my homemade pasta(which is actually way more difficult then people actually think😅🥲) and some Italian pasta dishes, now i am in the dilemma of what should i bake (as baking would be my strenght actually) maybe i should make croissant finally?😅🤝😄 Or maybe this cinnamon beauty?🫠
Uhh it’s a hard one - cinnamon buns or croissants 😀 two sensational pastries. Cinnamon buns is much easier though, with croissants you will probably need to try a few times :)

After I overnight proof it in the fridge, and I roll the dough out, it always retracts, even when I try to do the twisting. My swirls begin to unfold a bit when it’s in the process of baking. 😕 Am i doing something wrong? Please help! 🙏🏻 thank you!
hello Katy! thanks for messaging me! Yes i think I know what went wrong: this dough contains string flour which means the dough tends to bounce back, when we work with it we need to give enough time time to relax - roll and relax by lifting a bit, only then roll/shape your buns:) let me know how it goes :)
