FREEZING CAKE LAYERS 101 | 5 Steps To Properly Freeze Cake Layers To Keep Them Moist & Delicious

  • Freezing cake layers is one of my favorite baking tricks. It allows me to save so much time by baking the cakes ahead, and decorating on another day. Freezing cakes also makes the decorating job so much easier, when the cake is nice and firm as opposed to crumbly when they are fresh baked. Freezing cake layers, if done right, will also keep the moisture and fresh taste of the cake for as long as possible. In this video I share with you how to wrap and store your cake layers as well as how long to keep them frozen for and best ways to thaw your cakes for decorating.

      I would just double wrap them in saran wrap and place them in the freezer...but that never worked out that well....LOL

      CreatiKnit Yes it’s better to double wrap in saran wrap + foil then place in a container or zip lock bag. That way you can be sure it doesn’t get freezer burn or any condensation on the cake 😉

    Thanks for the information. I have Pre-schoolers and cake project this Saturday. I'm planning to bake the cake Thursday night and freeze, then Friday night I'm planning to decorate it , put frosting and some fondant decors.it's gonna be a whip cream frosting and fondant decors. will it sog? I'm afraid that decors will sog and fall. the event will be Saturday afternoon. Otherwise, I will decorate it on Saturday morning. What's the best way? I'm just a passion baker.

      athitiya singhapan If you are going to decorate it within a day or two, no need to put them in the freezer, the fridge will be enough. Make sure to keep them wrapped though, so you don’t get any smells from the fridge get into the cake. It will remains nice and moist for 2-3 days in there no problem. You would want to freeze cakes if you plan on using/decorating in 3 days+. Also I would take them out of the fridge maybe 10 minutes before decorating so it starts to form condensation on the wrapper and then take it out from the wrapper and start decorating. You want it to still be nice and cold when decorating, it will make your job a lot easier 😉

    Question, I made a cake late last night (Friday) that I want to serve on Sunday morning. I wrapped it as you mentioned this morning (Saturday) and put in my freezer. I’m trying to make it moist and I was wondering if the condensation will help with that. If I take it back out of freezer tonight before bed and put it in fridge, would it be ok to icing tomorrow morning? Or could I icing while frozen tonight, and put whole thing in the fridge. Trying to decide which is best to do for maximum moisture.

      Yes I do. I usually bake on one day then freeze the cake layers overnight and decorate the next day 🤗

    Do you ever have problems with cling wrap sticking to cake and removing some of the cake top?

      This can happen if the cake is still warm as the steam will make the cling wrap stick to the cake. Try to let the cake cool down to room temp before wrapping it ☺️

    How long does the cake last once defrosted? And do you need to keep the refrigerated afterwards as they have been in the freezer?

    Hello, I love your videos! I have a question, instead of freezing can I put them in to fridge? For the first time i'm baking wedding cake, it's gonna be 4 tiered. And as you can imagine it's gonna be huge🙈 I'm planning to start with baking, and put them in the fridge, and then make the frosting, put them together and put them back to the fridge. Today is Tuesday, i'm planning to start today, but the cake needs to be done Saturday. Do you have any other advice?

      Thank you that means so much to me!
      To answer your question yes absolutely, if your cake will be decorated/consumed within 3-5 days from baking then you can absolutely keep it in the fridge. I would still go through the whole process of properly wrapping the layers as mentioned in the video, to avoid any smells from the fridge to transfer to the cake, but it can absolutely stay in the fridge no problem. You can bake all your cake today, then decorate Friday and present on Saturday.
      Few things to mention since this is a huge cake, if the cake needs to transported to the wedding location, I recommend to transport each tier in a box and assemble the whole thing on the spot, to avoid it falling over. And also make sure to bring the cake back to room temperature before cutting it so it tastes better :)

    I want to make a cake for Halloween so I wanna do the cakes the day before. Do I just level them and wrap them in the clingy wrap and put them in the refrigerator for the next day? When I take it out do I let it get warm from the refrigerator or just go right in with everything else?

      Yes exactly just place them covered in plastic wrap in the fridge they will be just fine. For decorating you can do it right out of the fridge. It is actually easier to decorate cakes when they are still a bit cold. Just make sure to give around 30 minutes at room temperature before serving the cake so it’s not too cold to eat but perfectly ok to decorate it just out of the fridge. Hope this helps :)

    Thank you so much for your prompt reply nour! I have one more querry....i baked eggless chocolate sponge in 6" cake tin (4" tall) for 40 min ..it rose but after taking out it caved in. My batter was too thin or temp too hot or i shouldnt have used tall tin? First time i tried baking in tall pan. My batter was made from 1.5 cups of flour....can you correct me pl..what went wrong ? Thanks in advance.

      Unfortunately there are many factors that would explain a sunken cake, so I cannot tell you exactly what went wrong with your cake but here are a few points that you might want to look at:
      1-Too much or too little moisture can both make a cake sink after baking, so I highly recommend to follow the recipe you use exactly and ideally use a scale not measuring cups as they can be to precise.
      2-All ovens are different so the actual baking temperature inside might be different that what you set it at. If you are unsure if your oven is too hot or not hot enough, I recommend to get a small oven thermometer to have precise indication of the temperature inside it.
      3-If the cake is under baked, it will sink while cooling. So make sure to test it out with a tooth pick or pointy knife before taking it out of the oven. You want to see a clean toothpick or with few cake crumbs, but no wet batter.
      4-Too much leavening agents (baking powder/soda) will cause the cake to rise very fast but fall once it's out of the oven.
      5-Also if using butter in the recipe make sure to cream with the sugar really well before adding the other ingredients.
      Finally if your cake is fully baked then a few things you can do with it so that it's not completely ruined: Level it so it's all once layer. It will be thinner but you could still work with it. If it's too thin then you can re purpose it to add on top of ice cream or you can make some cake pops/cakesicles with it :)

      I usually bake my cakes in layers already so I don't need to cut them but If you want to bake a tall cake and cut it into layers I recommend to cut the layers once it is thawed out. Cutting the cake when it is still cold will be a lot easier and you get as many cake crumbs :) If it will be consumed within 2-4 days it can be stored in the fridge.

      I wouldn't recommend that. Depending on the weather and humidity the frosting will be not set and might start to melt. I recommend to store in the fridge and take it out around 30 min to one hour before serving so it get's back to room temperature ;)

    Hey!! I'll be baking a cake on 22nd & will be decorating that with buttercream on 23rd. Can I just wrap the cake with one plastic sheet & store it in the refrigerator instead of freezer for a day? Will it still remain moist & fresh?

      Yes absolutely! I would leave in the fridge even if for 2-3 days as long as it is tightly wrapped. Any longer than this then the freezer is a better option :))

      Yes you can use only foil if it is for a very short period but make sure that it is very tightly and securely wrapped. I would do a double layer. I have personally never frozen frosted cakes before. I leave then in the fridge overnight. If you are worried about condensation, I highly recommend putting the cake in the fridge inside the box so it is protected.

      sakshi gupta You can freeze the cake layers separately and take out to decorate on the day it will be served so the icing is as fresh as possible, or you also place the iced cake in a cake box and store in the fridge. The cracks can happen because of change in temperature/ condensation or actually not putting enough icing. If the layer of icing is too thin it will crack, so make sure to add generous and even amount alI over the cake. I wouldn’t recommend freezing a whole iced cake. Hope this helps :)

      Yes you can but ideally you don't want to keep changing the temperature of the cake from cold to room temperature so the sooner you put it back in the fridge the better :))

      If they are properly wrapped as explained in the video they can stay for up to 3 month in the freezer, but for selling I always recommend no more than two weeks for optimum taste and freshness :)
