How to store a cake overnight and keep it moist before decorating | The right way to store a cake

  • Storing cake layers in the fridge or freezing them is one of my favorite baking tricks. It allows me to save so much time by baking the cakes ahead, and decorating on another day. Baking the cakes in advance and storing also also makes the decorating job so much easier, when the cake is nice and firm as opposed to crumbly when they are fresh baked. Storing cake layers, if done right, will also keep the moisture and fresh taste of the cake for as long as possible. In this video I share with you how to wrap and store your cake layers as well as how long to keep them in the fridge or freezer for and best ways to thaw your cakes for decorating.

    I've made a cake for my younger sisters birthday(turning 6 on monday Mashallah). Cut the dome shape so its flat and wrapped it. Going to decorate it as well tomorrow and hopefully will be good. Thanks for the vid💖💖✨🎂

    Thankyou so much for this video. I was looking for a video that shows when to decorate the cake after thawing wasn’t sure if I should decorate the super chilled cake right out of the fridge or should thaw it on the counter shelf first. There’s no video that answers this specifically. So Thankyou for sharing this

    Hi, Thanks for the great video. My son's birthday coming in 2 weeks and I want to make 10 inch vanila cake, could you please let me know how much ingredients touse it? Also do I need to freeze it day before after cooling down 30 minutes?
    Or complete cool.
    3rd question- can I decorate cake a day before with Whipping cream and waffle paper cake topper?

    Love HOW YOU had a large Piece of parchment paper under the cake ,so its easy to take off the flat pan !!! Thnk you for this too!
    Also, do you decorate your cake THE DAY OF THE EVENT??
    And how far ahead you do buttercream is thats the case,? Or whippped cream. I know whipped cream is different. Thank you in Advance

      So glad you found this video helpful. Depending on the time I usually decorate the cake one day before the event or on the same day in the morning. I do my buttercream on the day before, for whipped cream, fresh just before decorating is best :))

    How do you keep from removing a thin layer of the cake when you take the plastic wrap off the next day? Doesn't it stick to some of the plastic when you pull it off?

      No, I usually find it is easier to level cakes when they are cold so it does not make a lot of crumbs :)

    Hi this is a very helpful video. My question is can I wrap the cake in foil instead of cling wrap?

      No the foil will actually damage the cake and leave dents. I prefer to use plastic wrap first then foil only on second layer if I will be freezing it, otherwise no need and you can just keep it in the fridge :))

      You can leave the cake outside only if it will be consumed in the next 12-24 hrs :))

      I don’t have any experience with run cakes specifically but generally cakes can last 2-3 months in the freezer if frozen properly :))

      You can store the wrapped cake directly, no need for airtight container. But it needs to be wrapped very well.

    Did you start wrapping the cake whilst it’s hot or after couple of hours when it’s warm ? Why no completely cool down the cake and wrap ?

      I generally let the cakes cool down for around 30 minutes then wrap them. I find it stays extra moist when wrapped before completely cooling down :))

      You can but if you are going to decorate anyway I recommend to refrigerate it because the decorating process will be easier with a chilled cake ;)

    Hi. Yesterday I searched so much for this info and I couldn't find anything. So I anyway wrapped my 2 layers of cake separately in cling film and put them in a zip lock bag and then tossed in the fridge worried that today on my son's bday it will ok or no. I had made butter cream frosting the day before and stored in the fridge. Now today maybe 2 hours before cake cutting I will keep the cakes out to come down to room temperature and then apply the frosting. My question: if the cake is too dry what should I do. I had already poked the cake and saturated it with milk after it cooled down.

      Great work! If you already added milk syrup to the cake then don’t worry it will not be dry at all 😉

      Yes they can stay fresh in the freezer for 2-3 months as long as they are properly wrapped like explained in the video :))

      it depends on when it will be consumed. less than 3 days, fridge is ok but more then freezer will be better :))

      You can leave to thaw in the fridge overnight or 30 minutes at room temperature if you are in a hurry :))

    Hi I can make a good sponge cake in an oblong tin and take it out off the tin still with the parchment paper on and put on a wire rack to cool, then when it's cooled I take i[ out of the parchment and leave on the wire rack over night but I always have a wet, sticky top on my cake. Can you please help me in what I'm doing wrong. I really do enjoy watching your videos they are very informative. Thank you so much. 😕

      I don't recommend using aluminium foil as it can stick to the cake. Plastic wrap is always better :))

    Can I store it in the refrigerator for a day, then decorate it with buttercream the next day & again store it in the refrigerator for another day before having it?
    And do you prefer brushing sugar syrups on the cake to make it moist?

      Yes absolutely! That is almost always the way I do it. Just make sure to take the finished cake out of the fridge 30 minutes before serving so it is not too cold. As for the sugar syrup it completely depends on the recipe you use. If you find your cake are on the dry side then definitely brushing it with sugar syrup will moisten it but if it is already moist then no need :)

      Can u kindly tell me when to add the sugar syrup, before storing in the fridge or after storing, just before frosting with buttercream? Brushing sugar syrup just right before frosting with buttercream does makes a lot of crumbs, So can u kindly share any tips that would cause less crumbs & will help to have smooth buttercream frosting.

      @@rosalindrose2410 I find that if the cake is cold it helps not make too many crumbs when brushing with simple syrup but actually most of the time I never add the syrup because the cake doesn’t need it, so I would say try finding a cake recipe that is nice and moist to start with :)

    Helpful hut way too long. Could've said double wrap with plastic wrap and out in fridge and made this video 30 seconds at most. Thanks for the tip but no need to make videos so long for something so simple.
