Can use blue pea flower extract for colouring. Add 2-3 drops of lemon juice & it turns purple.
Ube has a unique flavor that won’t be able to replicate but you could try just for the looks

The rice is not yet cooked..im sure it is half cook..you can see it in texture...the mango is not ripe..for content only🤪

The heat from the coconut sugar and salt mixture will further cook the steamed rice. i have seen a lot of Thai chef making mango sticky rice. Same process...
