One thing I missed: Can you just as well use a normal whipped cream dispenser? As those *look* to be the same, and come in at +- $45 for a 1L unit Is there a certain amount of fluid per nitrous capsule that works well? (as there's 0.5L, 0.75L and 1.0L versions)
No, normal cream whippers use N2O and are not made to take the pressure of N2 cartridges. ALso the N2O has bigger bubbles and makes the coffee slightly sweet

If you have a French Press you can use that to make / filter your cold brew coffee.
I never drink the nitro cold brew but it sees really fantastic.

No, they're pressurised in the capsules and good for long term storage!
