- This lemon blueberry cake is the perfect dessert for spring celebrations and get-togethers! Each layer is studded with blueberries and frosted with a bright and refreshing lemon icing.

Ingredients
3 cups all-purpose flour (375g)
1 ½ cups granulated sugar (300g)
1 Tablespoon cornstarch
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon table salt
½ cup unsalted butter, softened and cut into 8 pieces (113g)
½ cup canola or vegetable oil (120ml)
¾ cup buttermilk (180ml)
2 Tablespoons lemon zest (zest lemons before squeezing)
¼ cup lemon juice (fresh-squeezed preferred) (60ml)
4 large eggs, room temperature preferred
½ teaspoon vanilla extract
2 ½ cups blueberries (12 oz)
1 batch lemon frosting or preferred frosting

Instructions
00:00 Introduction
00:22 Preheat oven to 350F and line three 8” round cake pans by lightly but thoroughly greasing and flouring the sides and lining the bottoms with parchment paper. Set aside.
00:27 In a large bowl, whisk together flour, sugar, cornstarch, baking powder, baking soda, and salt.
00:49 Using an electric mixer, add softened butter, one tablespoon at a time, adding the next tablespoon only after the first is combined. The mixture will appear sandy in texture.
01:47 While mixing on low-speed, slowly drizzle in oil.
02:24 In a separate bowl or large measuring cup, whisk together buttermilk, lemon zest, lemon juice, eggs, and vanilla extract until combined.
04:23 With mixer on low-speed, slowly drizzle in the buttermilk mixture until the batter is smooth and completely combined.
04:43 Use a spatula to stir in blueberries.
04:54 Evenly divide batter into prepared cake pans and transfer to 350F oven (if your oven is not large enough for all three pans or if you only have two pans, it is fine to let the remaining batter sit on the counter while the first two pans bake. If all of your pans do fit in the oven, make sure to keep an eye on them as most ovens do not cook evenly and some pans may be done sooner than others). Bake for 30 minutes or until the surface of the cake springs back to the touch and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
06:17 Allow cakes to cool in cake pans for 10-15 minutes before running a knife around the edge of the pan to loosen cakes and carefully inverting onto a cooling rack to cool completely before decorating.
06:37 Once cooled completely, decorate the cake using lemon frosting (or preferred frosting).

I just made this for my wife's birthday. The cake itself is not very sweet, which she loves. The frosting is the perfect blend of sweet and lemon tart to compliment the cake. I wasn't sure how I would like it having tasted the cake by itself from cuttings before I assembled, but once it was all together it was quite good. Thank you for the recipe! (BTW this was my first ever cake from scratch)

Sounds delicious! I have been making a similar cake since the recope was given to me in the mid 1970s. The recipe uses whipping cream instead of butter milk and includes ground walnuts but no lemon in the batter. In addition, the lemon frosting is only between the layers and powdered sugar is dusted on the top. I often make handman paper templates with messages or patterns that I hold over the top while dusting the powderded sugar for celebrative messages. 😋

Just making this...it's in the oven, so I'll edit once I get it all together. The reverse creaming method took a year and a day, so I hope that it makes enough difference to be worth the time. Maybe my butter wasn't quite softened enough. I'm going to take it as a dessert for a few of us who are getting together at an open house at a winery we belong to later this afternoon. Blueberries are the last of a bumper crop from our own bushes this year - I've made a couple of batches of muffins and a bunch of jam already, but didn't want to miss out on trying this cake!

I baked my first cake ever today. This one because it sounded interesting and looked great. I made a few mistakes and the cake wasn't of display quality but it tasted great. Thanks
Mistakes:
- My pans were too big so it became a two layer cake
- I used castor sugar in the frosting instead of icing sugar so the frosting was a bit gritty. I wasn't sure what "powdered sugar" was
- I put the frosting on the cake while the sheets were still a bit warm so the frosting melted and I redid it after cooling the cake in the fridge

Yes it can! Make sure you don’t overfill your pan (you may have a little excess batter) and keep an eye on it as I'm not sure how long it will need to bake. The temperature will stay the same 🙂

You can also acheive the soft, tender crumb by creaming in the normal fashion, and using cake flour instead of all purpose.

That lemon blueberry cake looks delicious. However, when my grans come over to visit, I often treat them to chilled fresh avocadoes just plucked from my tree - as a healthy high protein KETO friendly alternative to cake. . Sure enough, as soon as they walk through the door, instead of asking for pizza or junk food, they head for the pantry and ask me, "Gwampa, let's have some more of that wundaful gween vedgebul ice cweam pweez." I hand them each a half of an avocaodo and a spoon - . Once they've all had their fill of avocado, we all go outside and plant the avocado seeds in the backyard,, hoping the family dog doesn't dig 'em up and eat 'em 'before they have a chance to add to the earth's sustainable bounty by growing into big new beautiful avocado trees! to match the one I already have. That family dog will eat just about anything. Just this morning, I saw him eating what appeared to be the handle from an old hammer i used about 40 years ago during some DIY renovations to the old shed out back. I've been wondering for a long time what became of that hammer. Now I finally know. The darned thing got buried - probably by either this dog or one of his predecessors. Thank you Sugar Spun Run for allowing me to share.
