    Giuseppe Crupi is the Director of Pinocchio Cookery School.
    After a 5-year research period in Trinity College Dublin as an Engineer, he managed a language School and translation Company.
    He loves cooking and languages and he speaks Italian, English, Spanish, but also some French, Portuguese, Irish and Greek.
    Pinocchio Cookery School has been featured on the Irish and Italian press and on the most popular radio and TV shows.
    Giuseppe is a regular guest on Ireland AM where he shows how to prepare traditional Italian dishes that are served during the cookery classes and in Pinocchio Restaurant.
    Pinocchio Cookery School is the first Italian school of cooking in Dublin. It’s a brand of the Flavour of Italy Group and represents the only body in Ireland with a structure and a stuff specifically focused on teaching and spreading the Italian food and wine culture.
    The Flavour of Italy Group includes one Cookery School, one Pinocchio restaurant in Ranelagh and one Pinocchio restaurant in Temple Bar.

    I've watched so many pasta-making videos, and even though they are basically all an extremely similar "recipe," none of them have been as EXCELLENT as this one. This guy is so funny and so wonderful! What a contagious joy!

    Fantastic class. I have been making pasta for a while now but there is always something more to learn. Making fresh pasta is so relaxing and very rewarding. My family love it.

    I have to admit, I cried watching this video! It brought some very old memories of my late grandma.
    She was Sicilian and very proud of her heritage. Sunday used to be “Family Day” and she would have the whole family for lunch. She used to have a wooden board to put over the table just for mixing the dough, a massive, thick, heavy rolling pin (about 4’ long!!!) and an old wooden broom stick to dry the pasta! Watching her working was a thing of beauty!
    I remember the countless times that she tried to teach me how to make the dough and I’d lose count on daily basis on how many times she would slap my hand telling I’m being to hasty or careless with the dough.
    One particular part of the video that struck a chord with me was when Giuseppe mentioned about the flour well with the eggs in the middle and slowly adding the flour from the pile. That’s exactly how she used to do it… *sigh*

    This man is very captivating, his speech is not mundane or repetitive and it keeps your mind wanting more. I have to say, one of the easiest teachers I have had the privilege to watch and listen to!
    You only mentioned "get a good one (pasta machine)"... Would you care to tell us which one/s you have?

    Do you use the coarse semolina or the fine (Semola)? Also, if I make a larger amount, do I increase the Extra Virgin Olive Oil?
