What are your top 5 Favorite Pastas?
My absolute favorite pasta is Lasagna. Clear second place are Canneloni (half filled with meat, half filled with ricotta. Distant third is Ravioli with nutmeg, spinach and ricotta.
My favorites:
Non stuffed Pasta:
1. Rigatoni Bolognese 2. Penne or Rigatoni Putanesca 3. Spagetti aglio e olio with Gambas
Stuffed Pasta
1. Raviolo all'uovo 2. Cannelloni filled with ricotta and ragu 3. Tortellini al Brodo (but only fresh broth)
Number one cauzuni - best ever! 2 pasta e fagioli, 3 Orechiette (or cavatelli or similar) with pomodorini and ricotta, 4 pasta with ragú, 5 spaghetti allo scoglio
1. Tagliatelle alla puttanesca, although Vincenzo's got me looking for fettucce now.
2. Bucatini aglio e oil, with anchovies and capers, with toasted seasoned bread crumbs.
3. Pasta e fagioli, because it's so easy to make, once a week in winter.
4. Cavatelli con broccoli.
5. Rigatoni alla Norma
And two seasonal only:
6. Orecchiette pesto, with fresh basil, toasted pine nuts, garlic, pecorino.
7. Farfalle alla caprese salad, with campari tomatoes, fresh basil, fresh boccaccini, and one raw peeled garlic clove, the only thing cooked is the pasta.
Ok, now I'm hungry. How can anyone pick just five?
My top besides yours is ricotta ravioli with the good sauce . It has to be home made ravioli! Then next I like ricotta gnocchi with the good sauce Vini. I make meat balls like no one else. I will take this recipe to the grave. I've never seen anyone making meat balls the way I do. I searched thousands of recipes. Keep it simple!!! Right Vini
Aglio e Olio will always be my top 1, because you just can't beat the flavor that's packed into such a cheap dish. Also, once I mastered it (it's got a lot more nuance than I expected) it remained a staple in our house

I was surprised how easy carbonara was until I made it, cement like cheese and egg into a cream in half a minute or less.
Vincenzo, your childhood pasta with tuna has become one of our favorites. It’s impossible to explain how it can be so good but it is. The quality of the tuna is super important so it doesn’t fall apart into a mush.
I’d like to thank you for all the authentic dishes I was able to make. I live in the US and thanks to you I was able to cook Italian dishes that reminded me of nonna.
Vincenzo, I have a request. I'm half Sicilian, and want to get back to my roots, so I've been trying Italian recipes I've never had before. There's a terrific book out, "Celebrating Italy," that is all about the traditions and recipes. The recipes have marvelous names, like a cookie named St. Agatha's tits to honor the Saint who cut her breasts off to make herself less desirable to men.
Or, Sicilian specialties. I'm Sicilian too (Siracusa).
Yessss! Vini. It was really hard to choose between gnocchi and clams. In the end I'll take the clams too Vini. What a rough life we Italians have choosing all of this fantastic food! LOL.

OMG...I can see why you find it hard to choose the best dish! I want to very much try the clam dish! I've made the Nonas spaghetti!
I will not make spaghetti any other way! If you make large meatballs, use them on a sandwich! The sauce is great with a little or alot mostserlla cheese and parmasono.
Clams, gnocchi is just fancy mashed potatoes

I really love the Pasta al Limone recipe. At home we usually cook some dish very close to it. It is basically the same but the mint is replaced by fried zucchini. That is very delicious, too.

Absolutely love the #2 with your nonna... definitely going to try it! my nonna is second generation Italian, but strangely enough, didn't cook Italian dishes. I must say I am a pasta lover and could eat it for breakfast lunch or dinner. Of course my Dr.. would have a cow since I can't have a lot of starchy food. I will just have to make smaller portions.. I am hooked on how you cook and I can't get enough of your videos.. I have to say for 60 yrs I was never able to eat red sauce because of all the other ingredients that was put in the cans of tomato and sauce.. Watching your video on how to make homemade sauce has kept me in my kitchen for days making and storing for later... Again . Thank you for all the wonderful recipes.. Keep them coming.

A phrase we have is ‘bring the pasta to the sauce not the sauce to the pasta’ 😂 (which means mix it don’t just put the sauce on top)

A couple of years ago an Italian national showed me how to make Spaghetti al Limone, which I hadn't heard of. His version used panna da cucina, which I guess is basically cream. That seemed fine at the time, but I am very glad to see your version here without cream. I'll be trying it as soon as lemons are in season.

Bravo, thank you for the inspiration, especially the recipes! I wrote down all the ingredients for the preparation and we'll go shopping on Thursday. It's just brilliant to conjure up such delicious food from so few ingredients, especially the lime pasta made me very curious. And the best thing is the ingredients don't cost that much but I have to admit that I can't make the recipe with the mussels because seafood costs an outrageous amount here. I would also like to give an update because my child has asked for double portions the last two times even though he is not a big eater 😚👌

I have to say, although a lot of pastas are available in the Netherlands, the actual recipes are not that common, at all! Simplicity with sauce in a jar, and usually on top (yes, really), it surely opened my eyes to see how much is possible, and how much the dish is improved by simply changing the recipe to properly include the sauce. Thank you!

Hi Vincenzo, 3 weeks ago they opened an "Italian" restaurant in our small town. So we went there to see with friends. I didn't order any food there... Why? I applied the so-called "Vincenzo" test there (I invented the name of the test :-)))
The Vincenzo test means: You open the menu to the pasta page, look for "Carbonara" and read the ingredients....
I did it, I started laughing so loudly and so sincerely that the whole restaurant looked at our table incomprehensibly...
What would you do in my place? If you saw this in the menu:
- Spaghetti ala Carbonara, ingredients: Pasta, onion, bacon, milk cream.......🤣🤣🤣In an Italian restaurant ??? The world must have gone mad...

try it mate, that one is my favourite of all times too, clams are simply delicious. find a good fishmonger, don't buy canned or brined stuff, you wont regret it!
If you don't like seafood, try freshwater clams :) I met people who lived in a van by the lake near me, who would dive for them every day. "If this van's a-rockin', don't come a-knockin'' " Also, our Zebra mussels here in the US need to be harvested instead of poisoned. Putting poison into the environment is counterproductive. But perhaps you meant that you don't like mollusks in general.
I don’t have one favorite, but I had ravioli with fish, cheese and bread filling and they were delicious. The pasta itself was made with some wine, great stuff.
Easily my favorite is linguine and clams! Wow!

I made up a recipe with mini farfalle, diced chicken, 'ceci' peas, toasted pine nuts, capers, artichoke hearts, some garlic, black pepper, dried oregano, olive oil, parmesan cheese, and a lotta lemon. I'll try the fresh mint sometime. My lemony pasta dish is more on the oily side, too. I often sprinkle the cheese on top after it's ready rather than stirring it in.

Pasta al limone really surprised me, I never had it. I was in Amalfi in the 90s (almost got adopted by a restaurant owner back then), but in all my years the combination lemon, mint and pasta never occurred to me. Thanks for the inspiration, I'll give it a try (in the spring/summer, when I got fresh herbs again).
And homemade gnocci... man, it's a long, long, long time since I made them and they were fabulous (followed Gennaro Contaldos ricotta dumplings recipe). That's a big trip down memory lane... gotta make that soon, maybe together with my girlfriend and her girls, a little family project :)

Im from Germany and i recieved guanciale and peccorino from a guy whos working with me. Hes from Sizilia so i told him to get me this stuff to make Spaghetti Carbonara originale like you do it .Ive used the same recipe like you Vincenzo it was soo unbelievable tasty ❤

6:40 Spaghetti with big meatballs is an American thing, but spaghetti with teeny meatballs is an Italian thing indeed. And this is where the discussion sometimes arises where people say that spaghetti with meatballs don't exist in Italy. Of course they don't exist with big "American-style" meatballs, but they have always existed with teeny meatballs. Big meatballs in tomato sauce we make them as a second course and with the sauce we season the pasta.

Excellent choices, though my mixed meat ragu for me is my favourite. It takes leftover cuts from trimming briskets, pork butts and pork ribs and make a ragu using soffritto, tomatoes, red wine, parsley and basil served with strozzapreti.
Gnocchi is my #2 mainly for sentimental reasons, it was the thing Nonna perfected and has been handed down to now our kids know how to make it now. We can use sage and butter, pesto or even bolognese sauce works well.
#3 is another one of Nonna's, she took olio e aglio and added anchovies. Something I loved as a kid growing up and one I still love in my 40's. I know Vincenzo you are not the biggest fan of anchovy, I personally love it.
#4 is Arrabbiata Calabrese. I always enjoyed Arrabbiata but it was not a top top favourite of mine until I discovered nduja. Now I can't get enough of the stuff.
#5 is Carbonara, a classic for a reason. I was an adult when I tasted this proper for the first time, as this was something Nonna didn't ever make, she was from rural Veneto so not really that proficient in Roman dishes, I never liked the cream crap that you get in restaurants but when I tried it for the first time proper I was blown away.
