    Giuseppe recommends using Rooster potatoes, but any floury potato will do.
    This recipe feeds 6-8 people, so invite some friends & family over, make a little gnocchi work line, and enjoy making and eating this delicious pasta together.

    Giuseppe Crupi is the Director of Pinocchio Cookery School.
    After a 5-year research period in Trinity College Dublin as an Engineer, he managed a language School and translation Company.
    He loves cooking and languages and he speaks Italian, English, Spanish, but also some French, Portuguese, Irish and Greek.
    Pinocchio Cookery School has been featured on the Irish and Italian press and on the most popular radio and TV shows.
    Giuseppe is a regular guest on Ireland AM where he shows how to prepare traditional Italian dishes that are served during the cookery classes and in Pinocchio Restaurant.
    Pinocchio Cookery School is the first Italian school of cooking in Dublin. It’s a brand of the Flavour of Italy Group and represents the only body in Ireland with a structure and a stuff specifically focused on teaching and spreading the Italian food and wine culture.
    The Flavour of Italy Group includes one Cookery School, one Pinocchio restaurant in Ranelagh and one Pinocchio restaurant in Temple Bar.

    Giuseppe: Riga gnocchi is easy to find anywhere
    Me: First time I've seen it in my life
    Edit: made the gnocchi, it was like eating a cloud, fantastic stuff!
    Kinda shows you how different traditional cuisines are in a lot of ways.

      Giuseppe actually lives in Ireland now! Not that I've seen many of them around, either (I actually got mine from Giuseppe 😆) but they're pretty easy to get hold of if you do online shopping (loads of options pop up on Amazon, for instance) so perhaps that's what he meant ☺️

      It is easy to get it even in supermarkets but they are far away from real deal :D my kids goes crazy for them

    @ilovecookingireland do you or anyone know how he cooks the potato. I peeled and boiled them but it made my dough feel hydrated. Tasted great but not that solid texture

      Boiled or steamed, whichever you prefer. Keep the skins on for cooking so that less water is absorbed into the potato, then peel off once cooked. Hope this helps!

    What are rooster Potatos ? How are they made?

      A Rooster potato is a type of potato. It has red skin and is a floury texture once cooked. You could use any floury potato variety. Waxy potatoes aren't great for making gnocchi :)

    If you can’t find a riga gnocchi, look for butter paddles. They’re the same thing.

    I always add chicken and sliced cherry/grape tomatoes to my pesto pasta dishes. The chicken adds nutritional substance and the tomatoes helps breakdown the richness of the pesto flavor. A good balance imo.
