Grandma's Rhubarb Custard Pie - Bonita's Kitchen

    Our recipe today was shared with us by one of our viewers from Corner Brook, Newfoundland and Labrador we thank you for sharing your grandma's recipe and your mom's pastry recipe with us.

    Ingredients:
    Recipe for grandma's pie filling:
    1 Egg 1 Cup sugar, or to taste
    2 Tbsp Flour 3 Cups rhubarb, diced
    Viewers Moms Pastry Crust
    Recipe:
    5 Cups all-purpose flour 1 Tsp baking soda
    1 Tbsp brown sugar 1 Tsp salt
    2 Cups lard ( Tender Flake ) 1 Egg
    1 Tbsp vinegar 1 Cup water
    Method for filling:
    In a bowl combine egg, sugar and flour, whisk together.
    Then add diced rhubarb and fold together, after make a homemade pastry, see TWO recipe below.
    Pre-heat oven to 350ºF and after pie crust is made pinch sides together, place pastry in pan and bake for 10 minutes when ready pour all rhubarb filling on top then add strips of pastry “ Grandma always use strips”
    set timer to 30 to 45 minutes depending on your oven. Pan crust may shrink a little but after you add the strips it will fill in the crust.
    “ Use cookies sheet with foil under pan for dripping”
    When baked remove from oven and let cool before cutting pie, serve with thick cream or ice cream.
    Method for Mom's Pastry:
    Mix together flour, baking soda, brown sugar and salt, then cut lard in cubes and add to dry ingredients.
    Blend all ingredients together with hand, mixer or pastry cutter, until all combined.
    In a one cup measuring cup add egg and vinegar and mix together and top with water to make one cup.
    Add liquid to flour mixture and continue blending together with hand, mixer until it forms a ball. “ Add more flour or water if needed”
    Cover in clear wrap and put in fridge to cool lard, chill overnight of for a few hours.
    When ready remove from fridge bring to room temperature and cut in four equal pieces, makes four pie crust.
    Roll out on counter top with a dusting of flour, place one pastry in oiled pie pan and roll the others.
    Cut one in strips for the top of pie, the other two place on a sheet of parchment paper and a piece of clear wrap, roll pastry in parchment paper and wrap in clear wrap to freeze for later use. “ Mom made this pastry for over 60 to 70 years”
    Bonita’s Kitchen Pastry Crust
    2 Cup all-purpose flour, extra for rolling ½ Cup Cold Butter
    ½ Tsp salt ¼ to ½ Cup cold water
    1 Parchment paper
    Mix flour, butter ( chop in pieces) and salt together in bowl mix with your hand or food processor when mixed add water mix until it shapes into a ball then remove from bowl/mixer.
    Put a piece of parchment paper on the counter and sprinkle with flour then cut the ball into two pieces then put your pastry ball on top of it then roll until all even.

    “Combine 1 egg, 1 cup of sugar (or to taste), 2 Tablespoons of flour. Mix with 3 cups of diced rhubarb. Put in an unbaked pie shell and cover with a top crust of strips of pastry (Grandma always used strips). Bake in a 350ºF oven until rhubarb is cooked (usually 30 - 45 minutes). I suggest placing the pie on a cookie sheet covered with aluminum foil to catch any drips.”
    Mix together 5 cups of flour; 1 teaspoon of baking soda, 1 tablespoon of brown sugar, and 1 teaspoon of salt.
    Cut in 1 lb. of lard (MUST BE TENDER FLAKE) until mixture looks like crumbs.
    In one cup, beat 1 egg, add 1 tablespoon of vinegar, and fill with water to make 1 cup.
    Add liquid to the flour mixture and mix with your hands to make a dough.
    The dough should cling together, add more flour or water if necessary.
    Wrap in Saran Wrap and CHILL OVERNIGHT.
    Bring to room temperature before using. Makes about 4 pie crusts.

    Lard crust at house is a must . I have a big long row of that Rhubarb and it likes a good sunny spot and not so great soil. Now that pie looks amazing. I can almost taste it .     Good afternoon Bonita and Raymond I grew up with my mom making lard pie crusts. Only shortening she used until it fell into disfavor because of the unhealthy fat. But it makes excellent crust. Rhubarb was my mom’s favorite summer pie. Dad grew the rhubarb in his garden.

    What a great Pie. My rhubarb is ready for picking now. And it will be chopped and diced and put into the freezer with 3 cups in each baggie. Thank you so so much Bonita and Raymond.     Love this custard pie, I have been making it for years but I put a French Crumb top on mine. I will try this pastry all the same, sounds great. Keep up the great videos, we all love them.

    My grandma used to make rhubarb custard pie back in Michigan. It was so good! I live in Oklahoma now and it is too hot to grow rhubarb and the frozen stuff is not nearly as good as the fresh!!

    My pie crust recipe uses lard, and it's so much more flaky and light over the ones I've made using butter. It's an old Dutch recipe.
    I might give this one a try!

    This recipe arrived just in time. All of the rain this summer has caused my rhubarb to grow and grow. So I've been looking for recipes that use rhubarb.

    The pie looks amazing. I wish I could share some rhubarb growing tips with you Bonita but ours doesn’t grow very well either. It seems to me that the only people that can grow it easily are the ones that don’t like it much.

      @@bonitaskitchen You CAN still use the US Lard, but its not as solid as Tender Flake, its more like a hardened shortening.

    For your viewers in the US, please address the difference between Canadian flour and US flour. Your flour is higher in protein. Our equivalent to your flour is closer to bread flour. It makes a difference in baking.

    We don’t have that brand of lard. How is it different from other brands? Is it leaf lard?

      Thats ok you can use any type of lard, this is the viewers family preferences. But we do know its not always possible to by that brand. Enjoy :) Bonita

      This is my findings about Tenderflake lard from the maple leaf media centre: "Tenderflake lard is a pure animal product, not a processed shortening," says Colin Farnum, Director of Research and Development at Maple Leaf Foods, the company which owns the Tenderflake brand. "In the making of vegetable shortenings, liquid vegetable oils have to be partially hydrogenated in order to make them a solid, thereby creating unwanted trans fats in very high quantities. This is not the case with Tenderflake, a pure pork lard. Because of the way our Canadian pork is raised, it is exceptionally lean, so the naturally-occurring fat is solid. This results in a pure product that is excellent for baking - as generations have found before us. There is absolutely no need to fuss with Mother Nature," says Farnum. Bonita

      Ok good to know, I can remember growing it in the NWT and they were good. Do you make anything with them or just leave it to turn it seeds. Thanks Bonita

      @@bonitaskitchen I make pies, cakes, hot and sour soup, hot chutney, and loads more. The University of Alberta put out a cookbook called Rhubarb (don't have it now, leant it to a neighbour. And I use it all summer, harvest the last before the first frost and freeze it for use all winter. If only I could make clothes out it!

      It is definitely not a weed in Alberta, I use it all the time and it grows in my garden and I love it.

    I have never eaten rhubarb. Looks like colored celery. Oh well, if I don’t like it I’ll feed my husband’s coworkers. Nurses will eat anything LOL.

      @@bonitaskitchen I’m British, I know what it is, it’s not sufficiently cooked. Needs at least another 10 maybe 15 mins. We and the French cook rhubarb, we cook custard and we know what that should look like. The juices in the rhubarb have come out and it’s over wet. The recipe is fine.
      Try it again but cook it until it’s a rich golden brown and not full of liquid :)
