Easy Rhubarb Custard Pie / And A Refreshing Rhubarb Drink!

- This rhubarb custard pie and the rhubarbade Is an easy yet refreshing and elegant addition to your meal! Here is the recipe for the pie. I hope you try it and see how you like it! Like I said I use the whole eggs in the custard pie instead of using the egg whites for meringue. But you can do it however you want!
Rhubarb Custard Pie
1 large cup rhubarb
3/4 cup sugar
1 cup milk
2 eggs
1 tablespoon flour
1 tablespoon butter
1/4 teaspoon salt
1 teaspoon vanilla
Cut up rhubarb in fine chunks. Mix sugar, flour, salt and beaten egg yolks, milk, vanilla, and melted butter. Pour over rhubarb which has been placed in unbaked pie shell. Bake at 450° for 10 minutes then lower heat to 325° and bake for approximately 40 minutes. It is done When the pie is firm around the edges and still slightly jiggly in the center.
Cover with meringue made of beaten egg whites and 2 tablespoons sugar. Brown In broiler for only a few minutes. This makes only one pie. Enjoy!

My grandmother too! My father was from Easton - Reading PA. Pennsylvania Dutch and loved Shoo fly pie. I still make the wet bottom version.

My grandmother cooked with rhubarb alot. I didn't like it as a child, but I did like strawberry rhubarb cobbler I have had as an adult. I will have to try this recipe..looks yummy😊

Awwww this video makes me think about my mamaw. She loved and made rhubarb pie quite often. She passed in 1983, so I haven’t had rhubarb pie in many years. Priscilla, you are so beautiful and have such a pleasant demeanor. Wish we lived closer. 🤗💕🥧

Thanks for the memories! This was my favorite pie growing up in Ohio. My mother added 2 cups strawberries and 1 tsp. Nutmeg with oatmeal crumb top. Sadly it doesn’t grow in the south here. I paid $15 last week for 3 lb. of imported rhubarb. My yearly splurge 😊
You have such a sweet family, I love to see what things you are up to. I’m not a fan of rhubarb, but I would try the pie and the drink to see if I like it. The dinner looked good, I loved the tablecloth too. I was surprised by the small amount of chicken for such a large family! I guess you did have the cottage cheese as well, but my family would have not had enough when the kids were still home. You are a great cook and I love the way you bless your family and nurture them with good food!

Also, I grew up eating rhubarb from our garden. I would peel the stalk and sprinkle with salt. My mom ALWAYS made her famous rhubarb pie and strawberry rhubarb pie. I'm going to make your rhubarb custard pie! Yum!!

Now I am so hungry! The salad is making me remember I need to eat more of it as I have been lax in doing that but summer is perfect to start in again. Your rhubarb custard looks so delightful. Mother always made strawberry rhubarb pie and it really was delicious. We love rhubarb jam as well and rhubarb crisp. It took me a while to acquire a taste for it when I was young but as I got older it grew on me and I do enjoy it now! In fact I need to find some around here and try your pie. Looks yummy.

I learned something new! I didn’t know you could eat (drink) rhubarb that has not been cooked. My mother used to make a rhubarb cobbler and I can still remember the tart rhubarb with the soft warm cobbler crust topped with sweet ice cream. I love rhubarb pie, I was brought up on it. I froze a few bags to make it during winter. I have red rhubarb and it's not as tart as green rhubarb.

My Mom used to make a Rubarb Custard Pie, much the same as you just did, the only difference was she made a latace top and then of course, served with ice cream or whipping cream.

I buy the Sucanat from our farm to market store. But you can get it from Azure standard and maybe even on Amazon.

All your food looks amazing ! I miss not having fresh rhubarb, I’ve tried growing it but our hot sometimes dry Mo. summers are not conducive to growing rhubarb.

My 94 year old uncle told me recently to never wash rhubarb after it’s cut. Always wipe or wash your stalks then cut. He said it takes all the taste out if you wash after cutting. Although we have quite red strawberry rhubarb. Yours is quite green.
