    Just a tip for instant pots, you don't need to vent it for 10 mins. It'll automatically seal once the pot has purged and filled with steam.

    I have had luck with millet in quart jars for 90 mins. Not one jar was bad. Good Video. Love my instant pot

    Great to see you giving the Instant Pot some love. Been using mine since I started watching you almost 2 years ago with zero issues. Grain, agar, dishes, sub and even dehydration (with the air fryer version). It is a great tool if you are not obsessed with volume. Thanks for the trivet tip...did not know that. For anyone concerned or curious, there is a great study on instant pots for sterilization from a few years ago.       @@m.i.c.h.o HI. Yes, you can fit four quart jars in the 8qt insta. Although I am now doing all of my grains in bags and can fit in double the amount of grains by weight.

    On their website they say that their 6qt pro plus model is capable of reaching 15+ psi. These may not be viable for pressure canning but thanks to your work we can be assured of their efficacy for our mycological purposes. Great stuff as usual

    I've also been using the Instapot for years, and I absolutely love it. The infernal racket of the pressure cooker was driving me batshit crazy. Getting all new spawn jars was a price I was more than willing to pay to avoid the stress of having that blazing hot, hissing and steaming nightmare contraption wreaking sonic havoc all over my stove.

    I have the 8 quart version that comes with a 2nd lid for air frying and dehydrating so I use it to dehydrate as well as sterilizing and pasteurizing. I love it. I wouldn't do myco stuff without it.

    Thanks for confirming what I have recently learned to be true. The InstantPot works for everything! I wasn’t using it much to cook, but now that I’m learning mycology, I use it for grain, substrate, casing, agar and LC. There are still lots of people saying “you need 15psi!” which is not true. Love your videos! They’re super helpful.

    The way I got two quarts in mine is by making 4 pint jars... had a little extra once and was able to do 4 pints and 1 half pint... only did 45 min and I've had great luck with my jars so far... probably will bump it now since I see most people do much longer... thanks for showing some info on this, hadn't really seen anyone else talking about them other than to say they aren't 15 psi. Thanks for the video!

    The new(ish) 6QT Instapot RIO fits two 32oz Ball jars, without the trivet, side by side, as long as you position them where they dont block the vent.

    I'm brand new to mycology. Have two jars ready to go to bulk and 4 more on the way. I used my new instapot, but only sterilized for 90 minutes and half of my jars showed contamination. I figured out what I did wrong and fixed it on the second batch. I've had 2 uninnoculated jars sitting for a month with no contamination showing. It really is a "learn what works for you" hobby.

      @FknNefFy I was releasing the pressure and pulling the jars after the 90 minutes. I should have let them cool naturally. Plus I upped the time to 2 hours.

      If you're sterilizing grains other than brown rice, you should PC them for 2.5 at least in the IP. 3 hours is recommended.

    I remember that era of "ohhhh, it doesn't get 15 psi." It's like 7 degrees F delta. Add a 30 minutes if you're worried. It works.

    Would be interesting to test a sous vide to do larger scale pasteurization. Even a cheap model is capable of heating and holding a cooler full of water at 150-160 indefinitely while circulating. These kitchen gadgets are getting smart!

    Thanks for this video. I did do brown rice for 1.5 hours in my instant pot and half the jars were contaminated pretty quickly. I just bought a presto pressure cooker, but based on this I may return that and try just doing longer periods of time for my sterilization. I was able to fit in 4 pint jars fine in my 6 qt, though if I do what you did with nothing in the bottom I would be happy able to do 2 qt jars. Only real upside then with the one I just got would be I can fit up to 7 qts in it at once and it wouldn't take as long. But instant pots are definitely more user friendly too! Thanks for this video, a lot to think on!

      1.5 is plenty, with brown rice they take less time than that to steam sterilize if. 45 mins really is plenty on an IP. I would look at your rice prep, is it too wet? That will encourage bacteria and yeast. Or, inoculant, or sterile technique rather than the rice. Longer than 1.5 hrs is for cereal grains like rye and oats, as they have endospores.

    how long do you reccomend pasturizing choir lovers CVG substrate? I seemed to have contamination take hold on my blue oysters when they went to fruiting media (hardwood media so different but...) im paranoid now for my other grain spawn jars that colonized.

    Thank you for the video. I have been trying to find a IP with 15psi since last year, and was frustrated the Max was discontinued, which is why I never bought mine. Now because of Black Friday the thoughts of buying an IP came back and I was overwhelmed with the number of options. If I am to get one I might as well get one with Air Fryer and I was focusing on the most expensive models because my main use is for mycology. But now it makes me more comfortable to buy cheaper IP models. Thanks!

    awesome. I use a multifunction rice cooker to pasteurise my substrates and the keep warm function is the best thing ever! I love that you did this video!     Great vids, and new subscriber here! Wanted to ask if you fully tighten the lids on your grain/sub or just do finger tight? I've been using my IP for making LC and just keep it finger tight, but I'm going to also start using it for grains as well. Love your work, thanks for sharing your knowledge!

      Hey RV, I do finger tight. I keep them just a bit unscrewed to make them easier to open later on. With agar I also keep it finger tight, otherwise the contents will seep out of the jar during the cycle. Glad to have you onboard!

    I run food grade brown rice in my instant pot for 2 hours and keep getting wet rot… any suggestions? (Only 10% or so are sterile) I’m going to try running for 3 hours and see if that changes anything but according to the linked study 2 hours should be plenty fine

      You’re either putting in too much liquid inoculant or making the rice too wet, which is a common issue (and why I will be making a video soon on how to properly prepare rice next)

    Hello, good details, I was just in that decision whether to buy an electric pressure cooker or the traditional ones, as you say in the video, these pots have 1000w, they only reach about 10 psi, those with 1500w, some few reach 15 psi, and raise a temperature of 121 ° celsyus while the traditional ones reach or exceed 15 psi and can achieve a little more temperature, especially the stainless steel ones, also the issue of volume, the electric ones, at least in my country, reach 7.5L at most, my questions.
    1- Obviously, if you showed it, it works for you to place the jars directly on the base of the electric pot and they will not be damaged, but since I will be using another model of pot, I was thinking of placing a cloth on the base. What do you think?
    2- I see that it does not use any air exchange point of any kind, this does not make the jars airtight and makes it difficult to open them later.
    3- you pasteurize the substrate it would not be the same to directly sterilize the substrate whether in a jar or bags, so it will not be as much time spent energy

    hey man, quick question, do you think i'd need to put some buffer between plastic grain jar lid and the pot? I'm afraid these would melt from the stainless less steel's high temps during sterilization. Great vids btw!

      I never put anything other than foil. No issues. The steel’s temp shouldn’t be much if any higher than the steam.

    I have an electric pressure cooker there is keep warm setting but pressure cooking only reach at 60min for max (cy601868) what can i do if it need to increase time like this?

    On the 12 hour pasteurizing, why is it important to not go above 162?

      I wouldn’t go past 165 max. At 170ish the good bacteria will start dying, leading to partial sterilization, losing all benefits of pasteurization.

    There is a post on shroomery that shows micropore tape under the microscope. It is not much better than no filter. People also say that it micropore tape was never intended as a filter but a slight improvement over just open holes.

      Yet over hundreds of jars I have never had any problem with micropore filters. I started this channel because I had a grain jar that was over 2 years old with just a micropore filter, and inoculated that to great success. I used an instant pot to sterilize, and a micropore filter, two things ppl have said will not work. Yet it worked just fine.

    Oven tek pasteurization video said it only takes 2 hours in the oven so I'm wondering why you go for so long 12 hours? Is it really necessary to go that long?

    It’s possible to fit 3 qt jars per run if you situate them right! Arrange them in a triangle but be sure to position them so the sliding mechanism is unobstructed :)

      You must have a larger model because with the 6qt I can only fit 3 standing up (barely), and the lid is impossible to close.

      @@awesomestpotato4431 yes, there is a perfect alignment where it’ll snap on extremely easily but the margins are so small that it’s impossible to do it every time (I’ve only done it once or twice lol). Oftentimes it is hard for me to snap on as well.

    What do you think about just filling up the instapot to pasterize bulk sub, without the use of a jars?

      The sub will be way beyond field capacity, completely soaked and waterlogged. I know some people put it in a pillow, do that, and drain it out for hours afterwards.

    Looks like you could peel off the protective film on the buttons of the insta i could be wrong but the same thing happened to my microwave and when i did the buttons didnt look tor up

    I had issues with the heat on the bottom of the jars ,doing it like this ,causing the bottoms to break .I use a piece of folded aluminum foil to keep that from happening

      @@Mycophilia yeah ,.It happened a number of times .That was the conclusion ,I came to ,it's possible it could be something else ,it's only happened when I didn't have the basket in it , My nephew had the same issue,...IF you have teens around they like to hit the vent and release pressure for what ever reason., lol idk that can also cause them to break ..

      Hey old comment i know but just to clarify you just get a square of aluminum foil, fold it once and place it at the bottom of the instant pot and this has stopped your jars cracking?

      Put your trivet in upside down,you'll have about an 1/8 of an inch gap between the jars and the bottom of the instapot

      Not all mason jars are designed to be heated and or used for canning. Most of them are, but I've seen some that specifically say on the box not for preservation purposes

    I'm working my way through your old videos, and it looks like before you used to turn the pot on and off to keep temps lower and only run it for an hour and a half. How did you settle on running poo for 12 hours? And I assume the casing layer is fine with an hour and a half because it doesn't have many nutrients? Thanks for the incredible videos, I've been binge watching the channel all day and learning a ton of tricks to try haha.

      In short, I learned I could simply use the keep warm setting as it automatically stays at pasteurization temp. No more babysitting, other than feeding water now and then :) Thanks for watching!

      you don't pasteurize with coir or CVG or any combination of those as they are non-nutritious. Just bucket TEK as usual, you are getting two different TEKs mixed up.

    I have a Duo Evo Plus 8 qt and 4 ball quart jars fit without the trivet. What I’ve seen on different channels is to use the trivet. Right now I have 11 pint spawn jars with mycelium growing (sterilized for 90 minutes and seems to be working fine). Did pint jars because quarts will not fit with a trivet. Next sterilization of rye berries, will use quarts without trivet. My pot float valve automatically closes when starting the pressurization. Why do you close your valve manually? BTW i’m at high elevation 5000 feet and that means my psi is reduced by about two. Mush ❤

    I’d imagine I could use my Sous Vide Immersion cooker to do the sterilization process with more precision. Obviously this isn’t necessary but I already two so why not.

    I'm surprised I just found this video! I've been using my IP-LUX version for some time now with great success, even making agar and LC.
    My LC jars have micropore. Every now and then when I give it a shake some will slosh onto the the tape but I haven't run into any issues so far.

    Sorry if I missed this but why wouldn't you use the Sterilize setting? The Duo Plus series is the only one that has it. I tested with sterilization indicator tape and it was fully sterilized. So is there some additional advantage to using PC instead?

      It’s the same thing as the pressure cook setting, just pre-set at 15 mins I believe.

    I've got probably a silly question: are you sealing the jars before initiating the sterilization in the Instant Pot? Or are they loose enough that expanding air can escape them (and then covering with tin foil to prevent condensation)?
    I ask because my first instinct is "sealed jar will go boom in Instant Pot" and online I find people saying "ensure your mason jars have filters incorporated into the lid to allow gas to escape" -- yet I watched your video again to check, and it looks like your lids are solid.
    Please advise :)

      They are simply flipped jar lids with the bracket slightly unscrewed, so that air can escape (aka “unmodified lids”). Yes, having no way for air to escape would be a bad time 🙃

      Sterilize function is the same as the PC cycle from what I recall, just with different preset timeframes. Just as many other functions on the instant pot are pretty much skin deep and overlap.

    I'm a bit confused about the steam release knob. This is the only video that's mentioned turning the knob. I wonder if it's automatic on other models. I have the 8 litre duo crisp model

    Do you still follow the same procedure of cleaning and cooking the grains beforehand? Say for example I’m using popcorn, I’d boil it then dry it?

      There’s different prep TEKS. Depends on what TEK you use. I use brown rice exclusively now, and with brown rice there’s only one way to prepare it. No drying involved with any brown rice TEK.
