    3 pounds (1.2) kg of meaty beef neck bones, 2 pounds ( 900 g) of pork neck bones, 1.1 pound (500 g) of beef shank, 2 pounds (900 g) of beef bones or bone marrow, 4-5 carrots, 3 parsley roots, 1/3 of a celery root, 1/2 of kohlrabi, 1 pepper, 1 tomato, 2 medium sized or 1 large onion, 6 cloves of garlic, 3-4 mushrooms, 2 pieces of savoy cabbage leaves, a handful of parsley, 4 tablespoons of tomato paste, 14 cups (3.3 L) of water, salt and black peppercorns
    I am using a variety of bones with meat and boneless beef shank. I roast the bones only and not the shank. If you want to have a beautiful transparent look simmer the soup only and do not boil. Depending on the bones and size you need to simmer the soup for at least 4 hours or until the meat falls apart from the bones.
    Add the onion with the skin on. It will give a beautiful golden look to the soup. Remove the outer skirt only.
    Brush the bones with tomato paste and roast the meat at 415F for 35-40 minutes.
    After roasting the meat put them into a deep pot and add water. In this case you can pour in warm water, because the meat is already hot.
    Add salt, black peppercorns, garlic and onions. Bring the soup up to a boil, then lower the heat and simmer the soup for 2 hours.
    As you can see on the video the soup is not boiling just simmering. Because we roasted the meat previously we don't have too much foam on the top, but if you have some, just remove with a sieve or spoon. After 2 hours of cooking add the vegetables and season with salt. Simmer the soup half-covered until everything is done for 2 more hours.
    When your soup is done, strain through a sieve and remove the meat and the vegetables. You can serve the soup with the meat and vegetables with noodles or serve the meat and the vegetables on a separate plate.
