Easy pasta with mushrooms made by 95-year-old Rosaria!

- Rosaria makes 'tacchie', a version of Maltagliati pasta typical of Bellagra, Lazio. It’s an easy pasta to make and you can use any type of mushrooms.
For the dough: 300g 00 flour, 1 egg, between 85 and 100ml water
Condimento: 500g fresh mushrooms, porcini if you have them, garlic clove, salt - Zábava

What a wonderfully cheerful lady. For those who don’t know the image of Mary in the background is Our Lady Of Fatima, she’s always dressed in white and has a heart surrounded by thorns. She’s also known as Our Lady Of The Rosary, thus Rosaria's name Saint. Many Italians celebrate their name Saint.

I appreciate the mildly terrifying ease with which Rosaria can flatten a pasta sheet to the delicacy of tissue paper. Letting the mushrooms and garlic olive oil speak for themselves is a testament to the quality of ingredients around the village, I think. Besides the pasta I feel that the tradition of nightly bingo is one that that family is going to inherit: it's nice to see folk that get on so well with their relatives that they're happy betting pennies around a casual game.

I believe Rosario is my soul sister…I do not eat tomatoes either! But I love a red pasta sauce, just like her! This dish that Rosario so skillfully brought together looks luscious! Earthy and soul-nourishing. I enjoyed a little giggle when poor Rosario was being teased with a bowl of pasta, but no way to eat it! Her beautiful, smiling eyes shows she loves a good laugh! Oh thank goodness! I just had this meal in Lazio after I was taught to make pasta, and I've been searching for the authentic mushroom sauce... I thought it would be much more complicated, but as simple and good as it tasted, I should have known better.

Those fresh mushrooms! I love Rosario. She does everything at a relaxed paste and with a smile. The fireplace is delightful and I can only imagine the flavor of the mushrooms while eating them beside the fire. May her daughters be as blessed as Rosario. Great episode, again.

That looks like a wonderful Autumn meal! It always makes me laugh the lengths Italian cooks will go to remove garlic from a finished dish :-)
And then someone abroad says that we Italians use a lot of garlic. This is completely wrong as we also often see in these videos. On the other hand, those who use a lot of garlic, as I have seen in various videos on CZcams, are the Americans! When they make especially an Italian dish, they think that to be "Italian" they have to fill half a pan with garlic. ;)

Yes, probably. I use half a glass of Marsala ( kind of Port wine). And I also stick garlic with a toothpici, only I put 2 or 3 cloves.
@@ottawamountainman They might be just using the container for the salt. Remember sugar is an english word. probably means nothing to them .. just a container.
I love how eagle eyed everyone is! I tasted the porcini and she definitely added salt; the Italian for sugar is zucchero, so I think Rosaria has ignored the English words on them. 😁 best wishes, Vicky
Wouldn't it be a bit bland without any type of sauce or dressing?
È sufficiente il gusto dei funghi porcini,la salsa o il condimento ne coprirebbero il sapore.
As Stefania says, when you have porcini mushrooms this good, you don't need much else! But perhaps you could chop them up more finely to make more a duxelles mixture? 🙂🌺 best wishes, Vicky
