If I remember correctly, Janice Poon, the food stylist of Hannibal, mentioned in her connoisseur book that you could use foil instead of the green lotus leaves.
i wonder if the dish would have tasted better if babish used plain foil instead of lotus leaves?
That would actually make sealing of the pork before covering with clay even easier, there are so many flaps and holes on the lotus leaves compared to a normal foil
The problem is the leaves generally require repeated drying and reconstitution to be properly cleaned of the tea like flavour.

Just simple genetics and chemistry. There's nothing at all horrifying about it. The similarities were researched long ago by the medical industry to find out what animal organs could be best used to make prosthetics like hear valves, and it turned out to be pork.

I think Hannibal doesn't season his meat in the show because he has already done it - he feeds the guy seasoning before taking the leg, the show shows him doing this more explicitly to his other subjects later in the third season.

Television is also very exacting in how much time can be dedicated to each shot. The act, commercial, scene, etc breaks are timed down to the second, so it wants to focus on the interesting, unusual things hannibal does with the meat, like put it in clay. we'll assume he put salt and pepper on it. he's not an idiot. it doesn't show him washing his hands either, but we assume he did that.
I also like to think he likes his meat on the "rare" side.

I’d love to see more longpig recipes in the future. I generally pack my meat in a casing of salt and egg white to achieve this effect. Works wonders for cooking a whole thanksgiving turkey in two hours.

Because that way when he's done dicking around with it, the camera sees nice smooth sheets of prosciutto instead of uneven twine.
Actually, Hannibal only cannibalizes parts of people (typically an organ or a specific cut) he's killed. Sometimes he doesn't cannibalize them at all. He normally only cannibalizes people he hates, possibly as a sort of disdainful gesture of "people eat animals, so I'm eating you".

Cannibalism, at least in the US, is not illegal.
What's illegal is the fact that in order to have human meat you have to cut it off of another human, which IS an illegal action as it constitutes assault with grievous bodily harm or murder.
However, there is the legal exception where the person from whom the cannibal gets the meat "donates" parts of himself for the cannibal to eat.
Having said that, this is such a messed up topic I can feel my skin crawl by just typing about it.

In Anton LaVey's biography the author claims that the LaVeyan Church did participate once in cannibalism in San Francisco and there are claims that some members still do though rarely and "ethically" (the body from the book were "donated" if I remember correctly).
They do tend to use the Polynesian euphemism "long pig", which shows you that even in cultures and sub cultures that participate there is still a natural aversion to eating people.
I can make a theory based on basic logic/political science. Any tribe practicing cannibalism would do it in one of three ways: a) Ritualistic, eating the dead for example b) By way of Warfare, eating your enemies c) Desperation. I can't think of any other realistic situations. In the third case, they are likely to die out. In the second case, they are also likely to die out because constantly eating the dead will guarantee an outbreak eventually. The middle group is the interesting one. One can imagine that seeing an army rush in and eat your people is so terrifying, that the stories would have led to other tribes balancing against the cannibals and banning it to show their difference to the evil other.
It's how us Jews came up with the ban on human sacrifice by the way, it was an attempt to distance ourselves from other tribes in the area.

Ah! You only watched the first movie. Dr. Lecter cooked many parts of people over the course of the movies. I particularly liked when he was slicing a guy's brain out bit by bit, cooking it, and serving it right back to him.

Hannibal is a goldmine for re-creatable recipes. hey, Oliver, what about that weird small one-bite bird Hannibal made for Will? that scene was so intense, I was biting my nails the whole time (pretty sure I nibbled on some of my own flesh as well).
*edit: NEVER MIND! I googled it and the bird is called Ortolan and it's illegal to sell (although you can make it and eat it.) also it's so brutal that the French eat it under a napkin.*

The reason why Hannibal didn’t season the thigh was because he already “seasoned” it while it was still attached to Abel. In S3, we are shown how Hannibal feeds him and Bedelia with snails, acorn, oysters, and other flavorful stuff. Apparently, these foods help improve how they will taste when cooked.

I'm not too sure what things eat has too much effect on how they taste. Crabs and lobsters eat waste products but it doesn't effect their flavor I'm told.
