Tip: remove the black line you’d see where the guts are, that’s the blood line and it gives it a strong fishy flavor.
Also when gutting a trout. You can slice from the bottom up to the gills with a filet knife and grab the gills with your fingers and pull all the guts and gills out together in one clean fell swoop. Much simpler than what Babish did. First time in my life watching his videos where I actually knew how to do something better than him. Will definitely be the last too
@Kai Wilson sure a fishy flavor is fine. But the black line is basically blood and spinal fluid and if it brownish like that it is starting to congeal in the beginning of the decomposition process giving it more of a rotting fishy flavor.

@@solikerawrr Whispering would prevent you from hearing noises too, plus it's harder to put voice over on another sounds and whispering during filming would change whole challenge. Plus whispering is actually bad for vocal chords.

Absolutely love your show Andrew! But as a Trout fisherman, I have some advice... Don't cut off the fins if you're frying the fish, they crisp up like chips! Always cut the head off, this way when it's done you can grab the spine where you cut it and peel the whole thing out, no fancy pulling meat off the ribs needed, just one clean swoop and your trout is boneless :)

Point of interest babish, I'm an avid trout fisherman (and eater) and you made a big mistake with cleaning the trout here. Next time when you get the guts out, that blood line hugging the spine of the fish is actually the fish's kidney/detox organs. You want to break the membrane with a spoon (or even your thumb if you're in a pinch), scrape out all the blood and wash it out. That stuff is full of heavy metals and other lovely toxins, and can actually infuse into the meat when cooking.
Other than that, good recipe.
Hmm interesting... i always wondered why Japanese fishermen will scrape the spine with a knife or spoon during gutting.
Also worth noting, DONT CUT THE GALLBLADDER. Tastes awful and sours the meat quicker.
