  • How to bake super Easy Vanilla Sponge Cake Recipe!
    This is a promise kept in celebration of my Monetization and First CZcams Anniversary!❤️
    I bet you it's one of the easiest you have ever come across, the recipe is sweet and easy to bake!
    It's a moist and fluffy vanilla sponge cake recipe that you would love and you can bake at home with Family and friends.
    I had to come up with this recipe about 7 or 8 years ago when the one I baked for my husband's nephew went bad. Not the first time baking but it was exposed to heat and so it went bad fast. So, I had to create this recipe without the use of milk to help me increase the shelf life of my cake. At least, that's what my mind taught me as a young baker then.
    So here you go
    Recipe
    500g Margarine
    500g Sugar
    500g All Purpose Flour
    1 cup water (but I used milk in this video.)
    12 eggs
    2 Tablespoons Baking powder
    2 Teaspoons Vanilla flavour

    With regards to the recipe, these are some FAQs
    1. Is it butter or margarine?
    Margarine please, in Nigeria, margarine is commonly referred to as butter.🙂 I feel butter may turn out super light and airy as well.
    2. Can I use full cream milk?
    Yes, you can.
    3. Can I mix with a hand mixer?
    Yes, you can.
    4. Can this be covered with Fondant?
    Yes, you can also pair with other flavours and it's easier to work with if you bake a day ahead.
    5. What's the shelf life of this Cake?
    3 days at room temperature but it's best frozen.
    6. Can I substitute the water or milk with yoghurt? Yes, I believe but I don't know the quantity or result.
    7. Can I use buttermilk?
    Same as 6 above.
    8. Can I substitute 'X' for 'Y'? I can't verify the results of any of these substitutes.
    9. What is the baking temperature? Use your normal baking temperature which should be about 250°F or 300°F.
    10. What is the measurement for the milk?
    4 Tablespoons powdered milk to 1 cup water.
    11. How much does this recipe yield?
    For this, I got two 10"s and one 8".

      Thank you for this video ma. I'm about to make a two tiered fondant cake for the 25th but it'll be used on the 28th. I saw that you stated this recipe yielded two 10" and one 8" but further down you replied a comment and said two 9" cakes instead. Please let me know which exactly.

      I don't know if there's any difference, sounds like just semantics. The term might mean vanilla cake prepared in a 'special way' that is sturdy or has a longer shelf life.

      I'm sorry, I can't confirm that, you would need to measure it out. You know the size of the egg varies as well and this determines the quantity.

      Yes, don't overmix. Just mix to ensure all ingredients are well incorporated and that's why I mix on low speed when I start putting in my flour.

    Hello this video has been helpful but I have a question 🙋🏼‍♀️ do we need to mix the beaten egg white with our hand or spatula? Why not with the mixer

      Hello Mavis, you'd need to use a spatula.
      The beaten egg white is delicate and using a mixer would deflate it which would affect your batter.

      You'd need more than that actually, else it would be flat. I can't tell what quantity exactly but you can bake one first with and see what height you'd get, then decide on the other.

    Whenever I use liquid milk my get spoil in two days so I switched to powdered milk and my cake stays longer. But how do I know the measurements of powdered to milk and water to you used.

      You just press the ignition button for the upper flame,it will light up automatically,likewise the bottom part.
      I also made the cake for my son's birthday.i followed all your recipe,though I didn't use the oven cos I didn't know how to operate it then
      I did it the local way.
      ,it was so so yummy,they all love it.

      Thank you Janet! Cakes without milk well baked can last up to 3/5 days out of the fridge depending on the recipe but I would always advise you inform the client to refrigerate it. Difference would be the taste.

      Mixers and their capacity differ, so I would advise you to follow the visuals instead. My mixer might mix for 10 minutes to give the result I want. Yours might be for less or more so that's why I prefer the other. I share the times sometimes, but I feel it's better to work with what you have.

      Thank you, please follow the recipe but split your batter and add some cocoa powder or melted chocolate to your taste to 1 part. Then pour in your pan alternating the vanilla batter and chocolate batter, then you can make a swirl pattern and bake.
