Air Fryer Chicken Recipe - Chicken Thighs with Vegetables & Feta

  • A delicious and healthy air fryer recipe with fresh vegetables, chicken thigh fillet and feta cheese. It is a very nice Mediterranean recipe with some Greek and Italian accents.
    Ingredients (for 2-4 persons):
    - 250 grams of chicken thigh fillet (the extra fat gives it extra taste).
    - 1 zucchini
    - 1 eggplant
    - Oven potatoes (pre-made)
    - 2 red onions
    - 2 cloves of garlic
    - 1 large tomato
    - 1 or 2 bell peppers
    - Olive oil
    - Pepper and salt
    - Feta cheese
    - Basil
    Recipe:
    1. Bake the potatoes in the air fryer. I use ready-to-use potatoes for the oven. These are seasoned and come in an aluminum oven tray. I bake these in the air fryer basket at 180 C / 360 F and 10-15 minutes.
    2. Make a marinade with garlic, pepper, salt and oil for the chicken thigh fillet pieces. Let it marinate for as long as you want.
    3. Roughly chop the vegetables. And put it in a bowl. Add to this the chicken with the oil.
    (Tip: Cut the eggplant into slices. Place it on an oven tray and sprinkle well with salt. The salt draws the moisture out of the eggplant. Leave it for half an hour. Then rinse the slices with water and squeeze the moisture out of the eggplant ).
    4. Mix everything well and put it in the basket of your air fryer.
    5. I use the Philips Airfryer XXL with the grill plate. I set the airfryer at 175 C / 350 F degrees for about 15 minutes.
    6. Stir well a few times during the baking time.
    7. After about 15 minutes, add the potatoes. I cut the potatoes into smaller pieces.
    8. Set your air fryer at 160 C / 320 F and 10 minutes.
    9. Your dish is ready. Serve in a large bowl and top with crumbled feta and some fresh herbs, such as basil. Drizzle with some of your favorite flavor oil.
