To everyone complaining about this “not being Mexican cuisine”, the title clearly says Mexican Inspired so....it doesn’t have to be exactly like your abuela or mom made it. Most of these dishes are made with untraditional ingredients but I will bet everything is delicious.
The problem is that this is Texmex inspired, not even close to Mexican cuisine even on the inspired side. It's like saying "Greek inspired" and you get inspired by Italian food but put some Greek yogurt in one of the dishes.
Yeah, I mean, if it's a taco, my expectation is that I get a soft tortilla. Hard tortillas means it's a tostada or maybe a chalupa. Big difference, changes the dynamic of the food in my opinion.
Im am mexican... and I approve all of these, brave and interesting mixing japanese and mexican. pro tip, spray your tortilla chips with a mixture of lime and water, then springle some salt on top. beware not burning the dried chipotle, its burns easy and bitters, you can rehydrate it in a little water and then add them to the soup with your cans. thank you ramsay for showcasing our cuisine.

Mexican should be grateful that Americans celebrate 5 de Mayo even though it is not celebrated in Mexico. It does not matter what day it is. I live in Miami and will be celebrating 5 de Mayo just to have fun listening to the mariachis and I will be making tacos for my guests . But using the easy and quick way buying everything almost ready like the shells, tortillas, canned refried beans, canned corn. Etc . I really do not like to eats tacos prepared in Mexico because they use different flour to prepare tortillas. Those tortilla have an strange taste. I eat only what is inside the taco. I am sure that there is not one Mexicans who celebrate any American festive or patriotic event.

If you put a tortilla directly on your heat source it’ll change the flavor drastically. Or as shown in the video the shape as well. Tortillas are not supposed to be shaped that way or that crispy. That’s why we have tostadas. Sorry for the long explanation, us Mexicans just love tortillas

We heat the tortilla on one side until it begins to turn a bit browner and then turn it over so that the same thing happens on the other side. We never let him get those black spots from being burned and it shouldn't reach the point of getting that crispy.
Love you Gordon. Truly one of my favorite chefs. But watching you cook "Mexican" food - if that is what you are going to call it - is always painful. Even if it tastes good it is not mexican... not even tex mex. Have you talked to Aaron lately? He might be able to give you a hand.

Hello Chef Ramsay. I have follow you for many years and I really enjoy your recipes. I like the fusion that you did with the tacos and oriental flavors. The only thing I would say to you is that we, mexicans, don't fold and toast the tortilla in this shape. That is a terrible american idea. We reheat the tortilla in a "comal" wich is a flat pan and we use the tortilla very soft for rolling the tacos. Please you don't do what gringos do. Happy Cinco de Mayo day.
