RECIPE
Serves 2
Ingredients
2 x 8oz steaks, hanger, skirt or flat iron
Salt and pepper
2 tablespoons cold cubed butter
2 sprigs rosemary
2 sprigs thyme
1 clove garlic, smashed
Shoestring fries
2 large potatoes
Canola oil or vegetable oil for deep frying
Peppercorn sauce
1 tablespoon black peppercorns, crushed
Olive oil
1 tablespoon unsalted butter,
1 shallot, peeled and finely chopped
1 clove garlic, peeled and crushed
¼ cup brandy or cognac
½ cup beef stock or veal stock
¼ cup heavy cream
1 tablespoon cold cubed butter
Method
1. Remove the steak from the fridge half an hour before cooking to bring to room temperature.
2. Peel the potatoes then cut into thin, even matchsticks (use a julienne peeler or mandolin to keep the fries even).
3. Heat the oil for frying to 300F. Cook the fries for 2 minutes until pale golden and beginning to crisp, then remove from the oil and drain. Increase the oil temperature to 350F.
4. Heat a little oil in heavy skillet overt a high heat and season the steak generously. Sear the steak on each side for 2-3 minutes, or until cooked to your liking. Add the butter, rosemary, thyme and smashed garlic and baste the steak for 2 minutes. Transfer to a rack and leave to rest for 7-8 minutes.
5. For the sauce, toast the crushed peppercorns in a hot skillet for a minute until fragrant then tip into a bowl. Heat a little oil with the butter in the same pan, then add the shallot and garlic and fry for 2-3 minutes until softened. Add the toasted peppercorns and brandy and cook until most of the liquid has evaporated.
6. Pour in the stock, bring to the boil and reduce by half. Pour in the cream, cook for a further 2-3 minutes, then whisk in the cold butter.
7. Drop the fries back into the hot oil and fry for 2 minutes until crisp. Drain, then season with salt.
8. Slice the steak across the grain then serve with the fries and peppercorn sauce.

10:22 “and they’re starting to look like……shoe…”
Ha I thought that I was the only one to notice that 😂
gordon.exe has stopped responding
They were sticking together like a fucking bird's nest is what he would have said if someone else was cooking
HAHA@@hobbesthegoblin
😂😂😂
I'd play a drinking game where we take a shot every time Gordon says "literally", but my liver literally wouldn't be able to take it!!
or every time he puts butter in
@@mattdekker5693 well, my favorit word is "absolutely" 😹
Do it just with anybody. The word is meaningless because americans overuse it.
Watch his regular show and drink everytime he curses at his cooks
Of course it won't. It's at least 17 shots in less than 14 min.
Respect to Gordon taking the time to do these tutorials between the 15 TV shows he's also doing. Where the hell does he find the time?
he never has to do the dishes
Yeah it’s really difficult reading a script for dramatic purposes, why did 97% of every Hell’s Kitchen challenge end so closely??
It took him 12 minutes mate
@@danielwainwright4502 shame
I tried this recipe today with an average quality Angus sirloin cut. It came out soo delicious. The wife was impressed. Technique is key. Thanks Chef!
I always figurativly cook things. Im glad we have Gordan to tell us to litteraly do things.
"littrally" LMAO
@@jimbarrofficial I got close though!
And, would you tell Gordon that to his face? 😉😉
@@nicknellany2336 Yeah, he is a cook and not an MMA Fighter.
Its good Feedback. It was distracting for me as viewer. Working on your own speak patterns is a great thing and he clearly is the kind of person that works on continous improvement
The guy says it in every other sentence, its like when a kid discovers a new word
Gordon: "Simple & Quick Steak"
Me: "Stressful & Maybe Mistake"
Miss steak
Im sorry 😔
😊jj😢
P
@@mark0183don’t apologize for greatness.
"Simple and easy home steak"
Whips out a flank steak, which most home cooks don't have access to.
Gordon's favorite word: Literally.
He literally said literally like literally 500 times.
Needless to say, I have made a similar dish quite a few times albeit with a sunny side up fried egg included and it really is delicious! Thanks Gordon. ❤
I noticed that too lmao
i would call that a medium rare steak, not medium by any standards.. i also saw his reaction when he cut the steak.. got experience in the kitchen for 10 years.. or maybe im deaf and he said medium rare? or he just fried the stake cold so its red in the middle and fried outside because he might not care anymore
Gordon and the world literally. What a love story.
Literally.
#litteratly 15 times in this video 😊
Literally a better love story than Twilight
Beautiful!
World or word?
“Couple tablespoons of beef stock”, proceeds to pour a cup and a half in….
Yep, even a "pinch" of something means pinching with every single finger and you end up with a 1/4 cup of said ingredient lol!
Came here to see if anyone else had the same comment...
Looks delicious I want to make this for my gf
Definitely a cup and half.
Same vibe as adding a "few shots of vodka"
Every single time I learn something new. Thank you so much chef Gordon🙏
What do I think? Looks amazing. It’s incredible that I can learn how to cook from Gordon Ramsay. 20 years ago I’d have to get a job in his restaurant! Yet here and now he’s my cooking tutor. Incredible. So grateful Gordon.
I can’t believe that steak cooked as long as it did in the pan and came out so perfect. That was amazing.
He turned off the heat
And its not the same one
Haha yea i was thinking that steak is charcoal then like what 😳
@@iamplay797 well, he’s done it a time or two… lol
The heat was turned off 😅✅🔥but marvelous feedback !!
This episode was LITERALLY the best!
Literally!!
Thanks Gordon i love how yu go step by step introducing all the beautiful ingredients. sending my hellos from forest hills nyc. God Bless you.
I just lover the confidence in your cooking, not attending every simple aspect of the process, You know that it's done when it's done, It's always a method not a recipe, many people do not get that about cooking, kudos
I'm not a chef/food enthusiast. I have watched many episodes of the differently themed programs that feature Gordon Ramsay and they are consistently entertaining, however, it is presentations like this that make the greater impression on me. His remarkable focus, coordination, and passion are a joy to watch.
Well done (the video that is, not the steak).
Watch his home videos where he cooks with his children. Super heartwarming
@@8beef4uPAN DOWN!
Gordon's multi-tasking cooking skills are amazing. Everything would be overcooked if this were me. 🤣
Its the same here, but they change the food at the end to look perfect ;)
It comes with practise. I dont give it second thought at all when making something. Justs dont leave the kitchen (again, speaking from experience) 😂
Same
@@JoriDiculous Definitely. And also, put the phone/social media down when you're cooking. 🙃
literally
It's AWESOME to see someone with a mixutre of experience, knowledge and above all, PASSION, cook... You have to love it and taste it to share it with a loved one and see that gratitude on their face when they bite into it. Bravo.
Love the instructions. Short and sweet ❤
Literally
Gordon: "And its starting to look like... Shooeeee..."
Me: "Ah yes, a classic"
On this edition of "Gordan says 'Literally'"....... 😂😂
I've been passionate about cooking since my adolescent years! I simply love watching the process that Chefs take and try to replicate in my own kitchen. I then have the confidence to put my own spin on similar dishes and enjoy the final product! Loved this video just like all the others! Thanks @GordonRamsay
jeez.. It looks so easy and yet there's so much perfection that goes into that.
Absolutely superb timing. He knows what day it is today 😂😂😂
Literally!
What day is it?
@@redactedseed7114steak & bj day.
He’s so bored
He’d send you home in a heartbeat if you made this 😂
Everytime he says literally, i'm like: sorry Gordon, i'm always having trouble deciding whether i should literally or figuratively fry the damn potatoes.
Don't literally cook them, just imagine and then buy some from mcd
That was amazing. A true Chef's performance and display of how to cook a simple dish to 5 Star standard 👏
Good to see you doing this - you have entertained and taught us all so much - thanks
great multi task skills and thorough communication throughout. Great meal too! nicely done!
mouthwatering and seems something an everyday cook can do at home. Have all the ingredients except the steak at the ready! Thank you.
The man is truly an artist with food. Thank you Chef!
Gordon you are the goat keep doing what you do
This CZcamsr should become a chef he has great skill!
Are you being sarcastic? You do know who that is?
@@judithgarcia5732yes. yes he is.
Couldn’t agree more! This big boy looks like has potential!!
@@spencerj6557 Do you not know who that is? Is this a joke?
@@judithgarcia5732 woosh
Idk why I started laughing once he poked the steak. I Love how hands on Gordon like to be with food. Just got into cooking and im addicted to watching everything about him.😂
That looks so deliciously good. The steak looks so tender cooked to perfection and the Pepper sauce, I can feel the burst of flavour in my mouth.
Take a shot everytime Gordon says literally
You would need your stomach pumped before he gets to the peppercorn sauce 😂
Lol!! I was coming on here to the comments to say the exact thing!!…Literally… 😂😂
haha, been playing "when Gordon says" drinking games for years, always a good time ;)
We're all going to get liver failure, very quickly
Or have a look
Gordons knowledge, calculated by time spent, is stupendous. Top chef.
The consistency and relatableness of Ramsay is unmatched
Wow, certainly my next steak meal - great ideas to perfection.
I made this recipe tonight except I used a fillet tail. It was delicious! My first flambé and I still have eyebrows 😅. Thank you Gordon! I get so much inspiration from your videos.
I used an old rat I found in the cupboard and it was delicious! My first flambe! Wow! What a great channel this is!
These are my favorite Gordon videos. Where it's not about making a fancy or time consuming dish, but he's just showing you how to improve your own simple techniques, using 'simple' dishes we all make...
Looks amazing. Thanks, I will definitely be making this so hungry now, lol.
Love the tips and tricks , thank you master chef
Literally this is literally the best video on steak I have literally watched in literally ages. Like, literally 😂
I wonder why he didn't make the sauce in the same pan he cooked the beef? I'd want all that beefy flavor. Looks yummy 🎉
gotta show off his pan collection by using one for the steak, one for the sauce, and one just to crush peppercorns
@@LukeEsther ahhhh! That makes complete sense 😉
Anything Gordon makes I will always give it a go.
Fabulous Gordon! Always thought Skirt steak had to be slow cooked. You've just proved what a fantastic job you can do with it in a simple pan. Loved the sauce and fries too. 😊
Chef Ramsay's favourite word for today: "literally"
basically every British people lmfao. including me.
his favorite one from the beef burger on the mountainside was "in" and "on"
also "nice" and "beautiful" and "peppery" and "mellow"
he repeated himself a _lot_ this episode lol, I swear he said a few sentences almost the exact same way multiple times
How can one be vegan if Ramsey exists and creates things like that?
Thank you! Nice peppercorn sauce and ... the Belgian Fries technique finally arrives in the UK.
This series of videos are sooooo much better when he is by himself.
Wow, just wow. That looks absolutely delectable! Yeah, I can't believe how long the steak was in the pan but still turned out perfect medium rare. Good job Chef.
Steak looked good only he cut it wrong.. Editing team took care of that mistake..
That's what I was confused about I could of sworn he didn't cut against the grain im no expert so assumed I was wrong but im sure he cuts with the lines not against the grain@48pluto
The amount of butter used in the cooking process is mindblowing.
Costco, this guy doesnt know
This is AMAZING!!! GR is a demigod in our home-this is gold for us😂❤👏
yeah that looks perfect. everything's matching.
Gonna try making my first sauce. I looooooove pepper! :D
this sauce isnt as peppery as it looks, because it uses both butter and cream which cut on the heat.
Gordon, you are literally saying literally in literally every statement you literally make. It’s literally making me literally crazy.
I could watch you cook for HOURS!
That was literally anything but simple. Literally!
Thank you Gordan, I need some cooking skills tbh
" doesn't need a lot of sauce" then proceeds to pour the whole pan of sauce over the steak. Gotta love this guy.
One thing I can say, Gordon is programmed to cook like he’s just a worker . That’s respect
Would love to see all 3 chefs do a platform grab and time challenge against one another.
literally
literally turn the gas down. literally just turn the steak.
Gordon!!! I am a chef also (for more tan 25 years now)!
AND - for ME you are one of the BEST chefs in the world! Without a doubt!!!
Sorry ... But i love you!

9:37 Just a couple of table spoons?
I’m always so glad when Gordon says to literally do these steps. Whenever I watch other chefs, I end up doing their recipes figuratively
This was awesome. Thank you!
Skirt steak is my favourite. I was making fajitas with them all the time, then I realized how good these were on their own.
That looks delicious 😋
Only thing that could make this better is using the pan juices and fond and butter from cooking the steak in the sauce
and not putting pepper on the steak before searing as it just burns the pepper
Going to try it this way. one of the best things i got from one of his tips, is his way of doing scrambles eggs. look it up it is worth it. had great eggs since i started doing it that way. doesn't have to be complicated to be good
Great stuff as always “CHEF”. Thank you.
You are the best of the best... I did it and yep !!! amazing flavor there, quiet easy to make by following your advice. Turned out to be delicious, kind of want to compare mine with your result ... 😆😅
I am Italian.. from Florence... we like our steak! so well done!
big fan!
😋
That wonderful, buuutiful, amazing and fantastic seasoning sauce was fantastic on my NY strip but I did cheat on the fries and used precut but the Parmesan seasoning was chef’s kiss. Buuutiful! Love it!
That little shredding machine is fantastic! It is great for shredding cabbage also
Looks Delicious Gordon, I Learn So much From You, Thank you for sharing ❤
Amazing Masterclass!
❤ this is one dinner I am going too cook tomorrow. Ace
9:38 ''Just a couple of tablespoons of beef stock'' 😂
Reminds me of that 2 shots of vodka meme
hahaha was looking for this comment
Great, as always, keep it up!
My guy has amazing timing and control in the kitchen 🔥
That looks delicious. Love watching you cook.
I know . He should do more cooking clips
Maybe a squirrel next time! Love it!
so simple and gorgeous - am going to try it tonight
Let the knife..no let the pan do the work 😄. Love it every time
Wow amazing! Can’t wait to try making it!
When I make an omelette my kitchen looks like it’s been through war. So impressive how he keeps it clean at all times.
Thank You GR...I will try this recipe for the family. By the way, very wicked with that knife.
Let appreciate the great work done by Pan and Herbs.
now that's something I could make, and its quick and simple
The marketing effort on those pans is literally something else
They are fantastic pans lol
Which pans?
Looks like a winner for this weekends dinner meal. 🎉
Hahahaha 10:20
“And they’re starting to look like….shuuue”
Absolute perfection.
I’m going to figuratively make this right now. Literally.
My God that looks fantastic!
absolutely astonishing! not really feasible for the average kitchen and a "quick" dinner, but celebratory... on the weekend... amazing!
also despite gordon's experience... but that was not medium rare... more rare than medium but ok. no harm done. cheers!
This guy is hard worker...DESERVES his success
That is simply amazing!
