    It’s really impressive how Sarah can cook that in a skillet of that size, I always cook fried rice in a big wok at home and still the rice will go flying everywhere 😂

    Some tips: Chinese sausages are kinda salty, so don't put too much salt in it. Also, if you use Jasmine rice or other stickier rice, it's better to use nonstick pan, cuz the rice tends to stick on cast iron pan.

    And then there are people like me who prefer to have the rice fried first, and egg poured over (for maximum rice coverage); then continue frying till crisp and fragrant ;p

    I always use chorizo macao or the Chinese sausages for our fried rice. It also makes pancit (Filipino stir fry egg & vermicelli noodle) more tastier. Just part of being Asians.

  • @ariel3725
    @ariel3725 Před 6 lety

    Some people like chunks of egg in their fried rice. In my case, I put it last to coat the rice so you get that yellow tint.
    Also, if you don't want the rice to stick to the pan, the oil should be hot enough before you stir in the ingredients. That is if you're having trouble with stuff sticking to your pans.

    • @PancakezXD
      @PancakezXD Před 6 lety +1

      actually you could just leave them out or sub for any other protein ._. but you do need to make sure to season to taste; lup cheong/chinese sausages are really salty, and thin slices are usually added for flavour, so you might need to be more care than usual with the seasoning

    • @TheCluphy
      @TheCluphy Před 6 lety +1

      You can use bean sprouts, tempeh, greens veggies, and whatever you have in the fridge, because fried-rice made to be customized by anyone’s preference 👌

    2 tbsp of ginger??? That’s a lot! Add liaojiu, it will balance the unpleasant odors from the egg and sausage, when you add the soy sauce, cook it down to a reduction before stirring. Usually Asian fried rice is seasoned with white pepper.

  • @chrisphanqt5507
    @chrisphanqt5507 Před 6 lety

    sometimes I mix the rice with the raw egg, then stir fry the mixture with the rest of the veg and aromatics. It gives an even golden coating and the grains are nicely separated and fluffy.

    What does Chinese sausage taste like? Does it compare to a more commonly known sausage?

    • @xcaramelissax
      @xcaramelissax Před 6 lety +1

      Vi Isaac tastes very salty with a hint of sweetness. Texture is more firm/chewy compared to regular sausage.

      @vi9763 Před 6 lety

      xcaramelissax Thanks, maybe I'll add more egg to up the protein

    • @keffinsg
      @keffinsg Před 6 lety

      I disagree, the major flavour is sweet, at least for the kind of sausage featured in the video. The meat is not as finely minced as western sausages. And the sausage tends to be dried more than western ones, especially those originating in China which typically look very wrinkled. Those made by the Thai Chinese community tend to be less well dried and plumper. The one in the video is probably of Thai Chinese origin. If you like liver, there is a darker kind of sausage made with an addition of some liver, it is has a more complex and umami flavour.
