    Thank you for the recipe. I needed a recipe for tonight since I needed to cook my broccoli. It was absolutely delicious. I highly recommend it for your typical lazy cook since the prep is SO SIMPLE, and a lot of cleaning could be done during the cook time.

    My favorite recipe for a last minute appetizer that pulls from pantry staples is a simple delicious bean dip. I add a can of drained and rinsed navy beans, juice of a lemon, salt, pepper, a clove of garlic, a glug of olive oil, and a spoon of whatever dairy is in the fridge (ideally sour cream or creme fraiche, but heavy cream works well enough) into a blender and let it run til smooth. For the topping I like to fry a shallot sliced into thin rounds in olive oil until just golden, then toss in whole fennel seeds, caraway seeds, and aleppo pepper for just a few seconds then take off the heat and spoon over the dip. I like it best with pita chips, but crostini, or even tortilla chips are good!

    To make this gluten free you can chop or process pecans to create a breadcrumb-like substitute that becomes similarly toasted and crispy (credit to Downshiftology for the idea). I love this recipe! What a simple but unique way to use common ingredients.

    I always seem to get an odd flavor when I cook something tomato based in a cast iron skillet. That said, I going to try this with the white beans option.

    I've always heard no tomato sauce in cast iron (could easily do in braiser?). Sounds like one of those rules meant to be broken. Seems to fit into a Mediterranean diet.

    Main Dishing meatless takes a pro - voila! Thank you. Broccoli definitely stars well, and the complements are culinarily inspirational. Besides all that - - good eats!
    P. S. though, I don't singe the nutrients out of God's given food like vegetables that come out of the good earth. It will have to be 350° tops or skillet cooking.

    Real Italian Parmesan is made with calf rennet and therefore not vegetarian.

    Hmm... real parmesan/parmigiano-reggiano is not vegetarian.
    Animal rennet.
    Would probably have to stick with the fake stuff to keep this vegetarian.
