    I made these today and they were ON POINT! I made Them smaller and got almost 2 dozen out of the recipe. I also Added a tablespoon of peanut powder for a more Reese’s cookie taste and BAM! Soooo good! Thank you Ann!

    I thought I would add my comments to this video. I am not completely keto and I have celiac disease as well and another autoimmune disease. There are foods that make my inflammation worse and soy and chocolate are two of these foods that I avoid. I did not add the miso and chopped chocolate at all. I reduced the chocolate chips by 1/2 and just put up with the sore joints. I likely won’t use the chips again. But the taste and texture of these cookies was just like a childhood memory of my grandmothers gingersnaps. Even the cracking was perfect. I’m going to experiment with a combo of powdered ginger and grated fresh ginger. I will likely reduce the sugars a bit and add some molasses. I would like to recreate my childhood memory.

    Thank you so much for this recipe! Tried it and sooo goood! The miso really did give umami to the cookies, the perfect balance of sweet and savory. The hardest part about this was waiting for the cookies to cool down..

      You can probably leave it out or in exchange for some salt. It’s really only meant to boost the umami and savoriness which pairs well in chocolate chip

    Do you think the gum Arabic could help with the texture of the filling of pecan pie? Or do you to think adding Locust bean gum to the Arabic gum and guar gum with your caramel recipe could turn them more into caramels? I've been thinking...

      I haven’t tried using agar agar, but it shouldn’t be a problem. The gelatin is for the chewiness. If you use agar agar, please come back to let us know how it turned out!

      6.2g net carbs per cookie 74g carbs total in the 12 serving recipe on food social
      4 from the unsweetened chocolate chips
      11 from the Lily's
      8 from the Shio Miso
      51 from the almond flour
      None of the other ingredients should impact blood glucose.

      Miso is not a keto ingredient, but it can be omitted. It's made of rice & soybeans. A package I checked had 5 carbs per tablespoon, so 7.5 for the recipe.

    Love the idea of keto chocolate chip cookies, but the sugar-free chips you have to use get "burnt" in the oven and you can hardly tell it's chocolate anymore. For a chocolate fix, I prefer a cocoa brownie (brownies are pretty forgiving and you can literally use any brownie recipe and sub your keto ingredients for flour, sugar, etc.), or a PB cup with gently melted s-f chocolate.

      Not a fan of using glucomannan for my keto recipes. I bought 1 bag a couple of years again and it’s still sitting in my cupboard. Probably expired by now! I go through a lot of ingredients too when I experiment! 25 lbs of allulose in 3-4 months. So many more possibilities with the gums. Texture is also so much better.
