  • Recipe here: www.joyofbaking... Stephanie Jaworski of Joyofbaking.com demonstrates how to make Whoopie Pies. Whoopie Pies have seen a bit of a resurgence in recent years. This might be due to the popularity of cupcakes, since Whoopie Pies are really a cupcake in sandwich cookie form. They come in many flavors, but the classic seems to be these Chocolate Whoopie Pies which combine two soft and moist, dome shaped chocolate cookies with a creamy vanilla flavored filling.

      @@tlwilson1462: It's a shame nobody answered you over the past two years! Here's my suggestion: If you followed Stephanie's recipe to the letter, is it possible you may have left them in the oven a little too long? Sometimes that causes the finished product to be dry.

      Janis Hart oh they were so awful I threw them out! Yes I guess she doesn’t answer post often. I made them again and they turned out the same way. My stove is kitchen aid, new. I just can’t figure out what is wrong. Used fresh ingredients, temperature is fine, didn’t scoop the flour into my cup, making sure I didn’t add too much flour to make them dry! My best friend is Menonite and she makes them often (pumpkin whoopie pies) and hers are so moist. Since my husband loves chocolate pies better, I was excited to try this recipe. But I haven’t gotten a moist whoopie pie yet! Have to keep at it I guess!

      @@tlwilson1462: Hi *tl Wilson,* that's unfortunate that nothing you've tried produces moist whoopie pies - it's so disappointing when our baking doesn't turn out! I'm not sure what else to suggest to you, so I've sent a post to Stephanie above, at *Joy of Baking* in the hopes that she can give you some tips as to why your whoopie pies aren't turning out. All the best to you, and I hope it eventually works out for you!! 😊

    Baking soda (bicarbonate of soda) is different from baking powder. One teaspoon of baking powder is actually made from 1/4 teaspoon baking soda, 1/2 teaspoon cream of tartar, and 1/4 teaspoon cornstarch (corn flour). And yes, use 1/2 butter instead of 1/4 cup butter and 1/4 cup vegetable shortening.

  • @joyofbaking
    @joyofbaking  Před 11 lety

    Yes, you would use 1/2 cup butter (about 113 grams).

    I made these last night. I ended up with way more filling than I actually needed but I just froze the leftover until I decide on a use for it. Otherwise they were really good. I used half Nestle's cocoa and half Hershey's Special Dark and they have a wonderful, deeply chocolaty flavor to them. I also liked that the pies were on the small side, perfectly sized for one serving. I'd make these again but would probably halve the amounts for the filling.

      If you look closely at the picture of her finished product, it's obvious that she actually baked hers in some kind of cupcake or muffin tins...maybe even a whoopie pie pan, so don't feel so bad. You can tell because her finished 'cookies' are rounded on top and then visibly cut in, showing signs of being formed in some kind of pan to hold their shape while baking. See the little air bubbles...?

    I looked at the recipe on your website and looked at the section for substitutions. In this recipe there is both baking soda and baking powder. The Swedish translation is the same so, what do I do then? Then in the frosting you say you can use butter instead of the vegetable shortening does that men that I use 1/2 of butter instead of 1/4 of veg. shortening and 1/4 of butter?
