    Made these for my wife today as a surprise. She’s from Maine and she approves! And being a total disaster in the kitchen usually they weren’t to difficult for me to put together. They are delicious and very filling.

    FINALLY! This was my 3rd attempt at making whoopie pies and your recipe and techniques are the only ones that worked!! I didn’t realize how BIG they are supposed to be as mine kept coming out small and tall instead of big and round. They are delicious! Thank you for this great tutorial!

    I don't care where they originated from I'm from lancaster county Pa and no offense to anyone but no one can make them like the little old Pa Dutch Ladies, I buy them from a farm stand owned by old order Mennonites and her woopie pies are the best! 😋😋😋

      Cathy Weidman, I was raised in Lancaster too and I agree! I don't know what all they put in them, but I'd bet there was lard and not butter. And they were great.

    My Mom made fantastic whoopie pies, and this is nothing like her recipe. IMHO, the best filling is an old fashioned cooked filling. That's the traditional filling for this native Mainah!

    I made these and I only ended up with 7 wafers (cakes?) and they were MASSIVE. Definitely recommend cutting down the portioning from 1/3 cup to something more like 3 tablespoons.

    I just had my first whoopie pie a few days ago when I flew to Maine for my college graduation! I’m from the west coast, never heard of this and never even been to the east coast before. My school alumni association gave me one as part of their welcome. It was a pumpkin whoopie pie with cream cheese filling, OMG! I’m hooked! I generally don’t like cake but this thing is amazing. My new favorite dessert! This reminds me that it’s important to travel within my own country and get to know it, its people, and what they like.

    If you really wanted to make the filling bright white, you could add a tiny drop of purple food coloring to it... I believe that is what they do in grocery stores to make that pure white butter cream frosting.

      @@ilovekpop3427 I don't think Cream of Tartar is used as a coloring agent...I copied this from a Cream of Tartar info page... it is more of a stabilizer than a colorant... "Cream of tartar is a stiffening agent for making icings and meringues. The same acidic powder that leavens during baking prevents the crystallization and hardening of the sugar when making icing for the cake. However, bakers also use cream of tartar to make hardened cake icing or the really hard royal icing." ... Using the tee-tiniest dab of violet/purple food coloring will make a yellowish-white frosting whiter because of light-spectrum science that I won't get into because this is way too long already (but for the same reason fluorescent light is whiter than incandescent light, which appears more yellow - and purple is the opposing color of yellow within the color spectrum - they essentially cancel each other out from a light-wave standpoint).

    I usually buy Whoopie Pies from my grocery store but I think that they are using a different recipe. Maybe one weekend I'll make these.

    As a native of Salem MA., now in Palm Springs CA. why not Crisco in the filling???? That's how my mom made them. I've used the Fluff recipe that now uses butter, but we prefer the shortening version better.

      The HETH NAZI'S KINDA PUT AND WND TO MANY OLD FASHIONED FOODS! I PREFER THE BUTTER VERSION BUT NOT BECAUSE OF HEALTH BENEFITS! I HAVE HAD WHOOPIE PIES MADE IN WATERVILLE,(Oakland) Me.     Umm, I’ve had a kitchenaid mixer for over 25 years. It gets used. Every serious cook, and some not so, have one. That being said, you could use a hand mixer also. Or a wooden spoon. But it’s a workout to cream the butter and brown sugar to the correct consistency. I always made my younger brother do it.

    If you Whip ur Butter till it’s Super light and Fluffy for a few minutes.. You Frosting should turn out More White. 😊

    Ok to use milk with lemon juice for buttermilk?

      That is not, nor will it ever be, buttermilk. Buttermilk is cultured with the Lactococcus Lactis family of bacteria, which are very far away from the citric acid in lemon juice. You'll get soured milk, but not buttermilk.
      The closest substitute for buttermilk is milk keffir, which is basically just another cultured milk. You *might* be able to get away with plain, unsweetened yogurt, but you want to use a looser yogurt in that case...

      I haven't made whoopie pies but I nearly always use the milk and vinegar/lemon juice substitution for my great grandmother's chocolate buttermilk cake recipe and its always been delicious.

    Filling I use is marshmallow fluff confectionery sugar vanilla and shortening not butter. If you want that old fashion taste it's got to be shortening

      Two things to check.
      Make sure you use all purpose flour, not self rising.
      Don't over mix the batter. If you over mix, you will form too much gluten, giving the batter too much structure.

      Sold in jars at the grocery store. I have seen recipes for making it from scratch, but the jarred will be fine with these, and less of a hassle.

    I just made these and they are good but there's a major flaw in the process. DO NOT refrigerate your filling before you place it between the cookies. It gets too hard and when you put the two sides together it will crack your cookies and they will start to fall apart. Instead, make the filling and scoop some directly onto the cookies and put them together. I have no idea why they thought it should be chilled first because as you can see in the video, they do this and it cracks the cookies right on camera.

    it looks chewy. is it chewy? like do you need a glass of milk next to you, basically, when you're eating this? or can we add an egg yolk and some oil or something and make it a bit fudgier or is that definitely not ok please help I'm still new to making nice food..

      not chewy. this recipe is almost identical to the one Wilton has on their site. this one holds its shape, perfect to hold the cream. probably a cross between cake and brownie.

    Vegetable shortening is for barbarians. Would a neutral-tasting leaf lard or rendered suet tallow be a decent substitute for the butter, if butter is unavailable for some reason?

    Recipes like this one are ludicrous. To make it, would have to spend hundreds of dollars to buy a standing mixer which would very seldom be used. Looks like a great recipe but very impractical for the average viewer.

      Me too. I have a good one and a cheap one, but a stand mixer isn't necessarily required to make this anyway.

      An electric hand mixer is a good alternative to a stand mixer, but a stand mixer is really going to be beneficial for a lot of baking for many people. There is over 4 minutes of beating there, and doing it by hand will probably mean more time for the same result. Most people cannot/will not beat that long.

      Joseph Nardone this comment is ridiculous you don’t need a stand mixer to make these. almost any recipe that uses a stand mixer can use an electric hand mixer instead. anyone who bakes on a regular basis probably has either a stand or hand mixer
