  • Everyone will be excited to hear we are making Cream Puffs. The fresh choux pastries are light and crispy and the inner cream is exquisite. Definitely give it a try.
    How to make Cream Puffs
    cookingwithdog...
    (12 pieces) Cook Time: 90 minutes
    - Batter -
    100ml Water (3.4 fl oz)
    60g Unsalted Butter (2.1 oz)
    A pinch of Salt
    60g Cake Flour (2.1 oz)
    3 Eggs, Beaten
    - Pastry Cream - (net weight 500g/1.1 lb)
    400ml Milk (1.69 cups)
    ⅓ Vanilla Bean Pod
    4 Egg Yolks
    100g Granulated Sugar (3.5oz)
    2 tbsp Cake Flour
    2 tbsp Corn Starch
    100ml Whipping Cream with 36% fat (3.4 fl oz)
    ½ tbsp Granulated Sugar
    Powdered Sugar
    Rum or Brandy (optional)
    * 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

    I made these twice already! The first time, i did the recipe same as hers and there was way more pastry cream and not enough dough. Additionally, the puffs didn't look like hers... But the cream taste was extraordinarily good! The second time i changed it a bit. Using the dough recipe from "The perfect cream puff-Thomas Jeff" video, and for the cream, i changed it to 1 cup of milk, 1/2 cup heavy cream, and 1tbsp vanilla extract (to make it creamier)... and SUCCESS! Looked like hers, and tasted A-MA-ZING! She's awesome!

      Same!! theres too much cream and too little dough, when i made it the second time i decided to make double batch of the dough and one batch of the cream. It turned out that there was wayy too much dough and too little cream. I really dont know how to balance the raxio for this cream puffs

      Rachel Chan yes i boiled the vanilla extract just like hers, but the only difference from my cream is that i added heavy cream instead of it being only milk.

    Hi Chef! Just wanted to say THANK YOU for this lovely recipe! Recently I was craving for cream puff after tasting my friend's cream puff and I wanted to make it myself too! And the result is, IT SUCCESSED! I made this the first time and they came out perfect! Although I didn't add the whip cream in my custard cream but they still taste so so delicious! The slight saltiness of the puff combine with the not-too-sweet cream, PERFECT!

    Crucial information missing ... custard cream (creme patissière) is good to eat for about 3 days after it has been made, after that, throw it away.
    You can freeze the "choux" if they are not filled with cream, but do not freeze the cream as freezing will destroy the texture and make it liquide when unfrozen.
    To give your "choux" some nice color, you can use egg yolk (or beaten egg with) a little bit of milk and a pinch of salt that you brush gently on top of the batter balls instead of the water, it is called "dorure" in French, I don't know in English!
    If you want your "choux" to grow more round and even than what she had: take a fork, dip it in the "dorure", gently press it on the batter ball then turn the fork 90° and press it again to have multiple crosses.
    Don't press too har or it will flatten the batter too much and the choux will grow sideways
    Instead of cutting the choux in two to fill it up, you can make a hole (using the back of a pen on the downward face and fill the choux through the hole ... I find it neater and you can even make a light caramel thin cover to add some crunch to it.

      @@carolchen4360 You need to let the crust "set" and harden by allowing it to slowly dry.. There's still a lot of moisture in the choux pastry and opening the oven door causes the moisture inside the choux pastry to escape too fast. When your pastries are almost done crack open the oven door a with a wooden spoon to keep it propped open a small bit. This lets the heat out slowly and helps prevent the pastry from falling. This happened to me as well and I found this solution via another french pastry chef..

      Thanks for all the useful tips! Do you happen to know why she is whisking the eggyolk and sugar until it becomes creamy before she adds cornstarch and cakeflour? I don’t do it and I wish to know what value it adds.

    Small tip for anyone who doesn't own a spray bottle, I wetted my strainer with some water and used it to spray the baking sheet! My cream puffs are now baking in the oven :D

      jermini cong I think yes. definitely you can store it. you can try to cover it up with caramel or make dual filling. bitter cocoa wipped cream is very good combination with sweet...

      Awesomemener hi, I want to know (since you already made it xD), does the inside of the puff dry and crisp outside? oh and just to make sure. We need to bake it for 30mins or 13mins? I didn't hear it clearly between "thirteen" and "thirty"

    I have been watching your videos for a while now. For the first time I decided to actually make something, and I chose this recipe. The choux were exactly as shown and turned out to be the greatest everyone has ever had. (I did fail to realize what cooking flour was at first, but everything went smoothly after) So I went back here to comment that you can totally do that at home. It took me about 45m, and I certainly didn't rush. Added some rhum in the milk for extra taste! Thank you

    I've made this recipe four times now and it works very well. What's absolutely critical is getting the right amount of egg into the pastry mix. Just a little too much and the choux pastry doesn't puff. Much better to have a thick mix than too runny.

    Thanks Chef for sharing this delicious recipe. I made this today and it was almost perfect. In my opinion, we should make the custard filling before baking the shells because it takes approximately four hours to cool down completely. By doing so, the shells will be fresher and crispier by the time we add the custard cream.

    The recipe is great! I made them and they came out really nicely. The only thing was that mine came out smaller than the cream puffs that I get in stores. I used a sake cup, which might be a tiny bit smaller than tea cups. Both the puffs and the cream were really tasty. I also added Kahlua to the cream. Thank you so much for making it an easy to follow recipe!

      Carl Edgeworth I think she meant that they shouldn't eat sweets. Or at least sweets meant for people are usually not meant for dogs. My family members often fed my dog sweets and other "human" food when I wasn't around and, while it didn't seem to affect her negatively at the time, it slowly damaged her liver over the years and she ended up dying of liver failure. It was a horrible way for any animal to die. No one should ever feed dogs sweets or any other processed people foods (unless of course its something like unseasoned chicken, rice, or unsalted peanuts that are okay for dogs).
      Sweets like candies (and especially chocolate) are detrimental to a dog's health. Even things like plain citrus fruits can be terrible for them.

    Can you use all purpose flour instead of cake flour? And could you use vanilla extract instead of the bean pod?

      to make cake flour, use a cup of all purpose flour, then take out 2 tablespoons of that same flour and put it away. replace with 2 tablespoons of cornstarch. so you have almost a cup of ap flour mixed with cornstarch. Just sift it a few times after.

      When the dog does that he is actually begging for food. You really shouldn't feed human food to dogs a lot especially when cooking for yourself. However, there are similar recipes from human food to dog food recipes.

    Excellent recipe Chef! I just finished making a batch. Only thing I would change is halve the pastry cream mix as I had way too much left over + a little less sugar.

    Really like they way you made these choux puffs, especially cutting them on the diagonal so the top and bottom stay together.

    Made this and the pastry cream reaaallyyy delicious! Usually I just use whipping cream, but combined it with fla, it's perfect! :D Thank you!

    I tried this and it taste really good! Anyway I recommend adding less sugar to the pastry cream.
