- Beans paruppu usili is a vegetable stir fry side dish from Tamil nadu,which is made with the addition of steamed lentils.It is a popular menu on festive occasions and weddings too. Serve it with hot steaming rice and Mor Kuzhambu r vatha Kuzhambu.
Ingredients
Frenchbeans 250 g
Tuvar dal (pigeon pea lentils) 1 cup
Channa dal 2 Tbsp
Dry red chillies 5-6
Salt
Oil 2 Tbsp
mustard seeds 1/2 tsp
Hing/asafoetida a pinch - Jak na to + styl

Wow... I love this paripp usli. I had this dish when I was traveling somewhere long time back. Tried to make it after coming home. Didnt know that time that this ground paripp has to be steamed and crushed like this before adding to beans. So it didnt taste or look as the one which I had. It was long time bk when I didnt had this smartphone. Never tried this dish after that. Today after seeing this I am feeling very happy that I got the traditional recipe from you Amma 🙏🏻♥️💐😃I would definitely try it soon 👍🏼😍 Thanks a lot 😃

Nice to see the recipe I have been making this for couple of years same process that u follow but only difference is I make the dhal in equal proportion.. 1:1 , in between I made more toor and less channa but unfortunately find the taste better when it’s 1:1 .. what I do with left over plain dhal parupu usli is season poha and add the left over parupu usli to it and add a dash of lime juice and serve as a snack .. it’s yum.

Exactly same method we follow for beans, capsicum, avarakai, pudalanga, beetroot, vazhapoo, cabbage parupu usali. Same as you we too make. But we do not use mixie for powdering boiled one. We use hands...Then we fry kadugu, ulutham parupu, kadala paripurn in oil. We add beans, usali, fry it... There are few who fry grinded paste in oil directly instead of steam cook.

When you had shown kotthavaraka paruppu usili , I tried the same replacing with French beans and it came out so well that I got super impressed with myself :) Infact my extremely picky eater toddler also had with ghee rice.. many many thanks to you Mami..
