    This is so helpful Martha. Last year my maid quit on Thanksgiving day. I had guests coming for dinner so I had to try to whip the turkey up myself. I just threw it in the oven and hoped for the best. When we went to cut it there was this stuff inside. I had no idea that it came with the neck and giblets inside there. I just told everybody that I had stuffed it with a charcuterie tray. Everybody was totally impressed and thought I knew what I was doing.

    NO!
    Do NOT roast your turkey to 165 in the oven. It will only produce a DRY turkey!
    Get your turkey out at 155 and rest it on the counter. It will continue to cook to 160 to 165, depending on the size of your bird.

    "Trussing" the legs is a complete waste of string and time.
    It does NOTHING to make the turkey "more juicy"-all trussing does is throw off your cook time for the bird, because the legs are pressed too close to the breast part, thereby making your bird cook for a longer period of time, which, of course, will turn your breast meat into shoe leather.

    • @Joltzeria
      @Joltzeria Před 3 lety +1

      wait really? I was worried I needed the string to cook the turkey better. I'm a newb at this. So no trussing needed?

    • @a.barnard3205
      @a.barnard3205 Před 3 lety +1

      @@Joltzeria That's right because if the legs are trussed, they make it harder for the heat to reach the rest of your turkey which would be the rib cage and the breast!

      @a.barnard3205 Před 6 lety

      No, 165.

    BS on trussing.
    Trussing presses the legs against the body, which means the heat can't all get in there, which means your legs take LONGER to cook AND you also all but guarantee that your breast will be dry.
    Don't truss!
