Google it maybe you will learn something. those "other brands appeared after the shortage happened. the Thailand chilies they use for sriracha, the crops haven't done well for the last two years. those other brands don't use thai chilies the flavor is wrong.
@@c.campbell1166it’s not because of crops not doing well it’s because of legal actions within the company and they used red jalapeños that the original farm is now making their own sauce with the same peppers.
The original rooster brand sriracha hot sauce used jalapeños, I just read about why they are not producing anymore earlier today. That’s how I learned it was made from jalapeños. The Company lost a lawsuit against their Jalapeño Farm Provider due to agreements complication. But yes, there are Thai brands which the Rooster brand is based from but it’s not as popular.

Fermenting the peppers first also gets that savory umami action going too. Just takes a week or so but it's def worth it
I don't understand this. There's not a shortage. There's many other saraicha brand available that tastes exactly like red rooster or better.
