- The short rib grilled cheese...This may be the most important sandwich of my life. Created by my brother, Dave, the uniqueness of this sandwich stopped people in their tracks (along with generous samples of Brussels sprouts, also my brother's creation) and helped attract people to the cart…they talked about it, it pulled people in. Because of this sandwich, and the rest of that menu and the loyalty we formed because of it, it allowed me to have confidence that I could build something cool that people liked and inspired this journey in food I’ve been on for about 10 years now. Forty years ago a food truck served Italian food, the usual. But on Fridays the truck offered Italian tuna sandwich which turned out to be their biggest seller. I figured out some of the ingredients lots of fresh parsley, oregano, garlic, oil, vinegar salt pepper, parmesan cheese, and tuna. No mayo. It was my favorite and fantastic. Forty years later I'm still talking about it.

That's all I could figure out. The lunch trunk owner wouldn't give out his recipe. I had hoped our favorite chef would attempt it.

I followed the recipes (braised short rib and red onion pickle) to the letter and then prepared this sandwich. It's brilliant. Do _not_ neglect the pickles, the veg, and the preserves. The sum is greater than its parts.

I made the short ribs on Sunday. I pickled the red onions on Monday. I went shopping this chilly Thursday morning and got some watercress, Gruyère, blackberry preserves, and a nice loaf of pane Italiano…couldn’t find sourdough. I made this exact sandwich for dinner tonight and it is one of the best things I’ve ever eaten. Everything just works. I didn’t think I’d like the watercress but yup it works to. I implore anyone who is a true foodie…make this sandwich. Thank you Steve for the inspiration and the knowledge!

The shots and editing are always well done and the music just works. Most importantly the food looks great and seems like you can really do it yourself. I love that this video is a few recipes/videos leading up to it with the red onions, then the short rib, now this. Is like the Avengers of food.

Made a sandwich inspired by this with leftover shredded barbecued ribs rejuvenated with some worcestershire sauce on the stove. Did not have watercress, so replaced with a thin spread of dijon mustard on the other slice of bread (i.e. the one where the jam was not applied) for the peppery hit. Cheese was a mixture of mild cheddar and gruyere. Out of this world. What elevates the sandwich to the next level is that thin layer of jam.
Idk why but this backround music made this video 10x better to watch. Don't get me wrong the food was amazing on its own but the backround music was the icing on the cake to following along when making this
Man I love your Brother's mind. I wake up sometimes with an experimental breakfast sandwich in my head and my Husband is the perfect guinea pig. Last weekend was whole wheat toast or toasted English muffin will do, first layer peanut butter next pan sizzled ham, next scrambled egg flat in the pan and folded over, then cheese, then two ore more strips of bacon and last but not least either Bonne Maman Apricot or Black Cherry preserves, top with the other slice of toast smash a bit and serve. I never tell him what he is getting and I always get a rave review, i.e. Wow you can make that again. Totally sweet and salty savory.

Man, another amazing sounding sandwich. I used to make a lot of grilled cheese for me and my dad and i liked changing them up with different combos of meats and cheeses and sauces and relishes and i felt same way, i found combos i could just eat every day. Wouldnt get tired of them.

This was so good! I followed the recipe to the T! I got my sourdough bread, I couldnt find watercress so used spinach instead, replaced pickled onions for pickles and used Mozarella cheese. This sandwhich was sooo good!

I am interestingly doing your short ribs this weekend. Then this popped up. My favorite bread is sourdough and I love introducing berry jams to food. Not to mention the good amount of Gruyere.

I made this a couple of months ago and it is one of if not the best sandwich I ever ate. Well, I pickled the red onions on Friday. Made the short ribs Saturday…got the sourdough, Gruyère and watercress (blackberry preserves are still in the fridge). Tonight I eat like a king! Thank you Steve for your awesome recipes!

Smell = Memory. Lots of data available. While studying for a test, pick a smell to keep inhaling, then on test day wear the same smell or have access to that smell, test score higher. The Sandwich looks like a home run on all levels.

I had everything except watercress. My brother had finished off the pickled red onions that I made from your video lol. However, I did have fresh Arugula and I did have Kimchi. I followed this to a tee and used kimchi in place of pickled red onion and used arugula in place of watercress. The braised short ribs I followed your other video for and man was this absolutely to die for! A lot of prep work, but I find that phase to be the best part because the reward is that much greater when you put that time in. It’s also incredibly therapeutic. Very very good on all fronts!🤘
