As a Korean, your ingredients are very familiar but the recipe is kind of novel and inspirational! Almost the same ingredients in marinade are used-not blended-to make short rib stew. Kimchi and mayo are good friends but adding mustard is interesting! Always appreciating your wonderful videos!

Guga, I'd like to see you try to make Kou Rou Bao/Kong Bak Bao/Gua Bao, it's basically braised pork belly sandwiched in a chinese steamed bun, with the right vegetables and pickles, it's basically a Chinese "Burger"

Chive is an interesting choice for Korean short rib marinade. Try green onion instead if you want to make it more traditional but I'm pretty sure it's tasty either way.

@guga - what I do is deboning the short rib and use all the off cuts (silver skin, fat etc.) and the bones and give them a hard roast. Then I add them into the bag with the ribs and the liquid (however the meat is not browned at all).
What you end up with is, very tender and soft meat, but the flavor of the roasting. It is perfect!

You should try korean pear, it taste different than asian pear and is the one used by korean most of the time!
