  • Hi everyone! Here's my go-to easy vegan moong dal recipe that you can quickly whip up in the Instant Pot. It's soothing, delicious, and so so simple to make.     Ingredients (4 - 6 servings):
    1 cup yellow moong dal ( you can find this at any Indian grocery store or the Indian section of any store)
    1.5 tsp cooking oil (we used sunflower oil)
    1 tsp cumin seeds
    1 tsp finely chopped ginger
    7 - 8 cilantro stalks finely chopped
    1/4 tsp hing (asafoetida)
    1/2 tsp turmeric powder
    3/4 cup tomatoes roughly chopped (you can use any variety you like. I used some yummy tomatoes on the vine.)
    Salt to taste
    1.5 Tbsp cilantro leaves roughly chopped
    1 Tbsp lemon juice (you can adjust this according to your taste)
    3.5 cups water (2.5 cups to pressure cook and 1 cup added later to adjust consistency. You can add more water or less.)
    For the tempering:
    1 tsp cooking oil (we used sunflower oil)
    1/4 tsp cumin seeds
    1/4 tsp turmeric powder
    1/4 cup tomatoes roughly chopped
    1/2 Tbsp cilantro roughly chopped

    I made this too but added a tsp of mustard seeds, green chilli and curry leaves in the beginning. I added ginger and garlic as well rather than ginger by itself. Came out so yummy! Thanks so much for this recipe :)
