Awesome Ben! I often have juniors and work experience folks assigned to me, and I'm often asked to teach them some After Effects. Can be hugely time consuming finding good learning materials for beginners. This will definitely be a go-to recommendation for budding animators that I work with!

After Effects 2021 user here, I tried using the track matte technique for the first tutorial but it didn't work the way it should. I suppose it's just the differences between the software that we use (I noticed that yours is AE2023 while mine is year 2021). There wasn't a swirly thing in my Trck Matt except for the manual set-up. Turns out, I needed to place the video under the text and tell the track matt to "Alpha Matte" the text above the Video clip.
The same thing happened to me. I was not able to complete the first one.

The same happened to me, although when I do what you did and tell the track to Alpha matte the text, it is only visible when the layer is hidden (eye icon off), meaning the "welcome" word in white is not visible. Then when I make the layer visible I can see the first part (white welcome) but the "track matted" part doesn't show, instead it the word remains white but with a black background. I've tried everything, this is so frustrating.
