  • Crispy Apam Balik or also known as Crispy Pancakes with peanut filling, is a popular snack in Malaysia. The pancake is typically crispy, lightly sweeten with sugar, peanuts, and cream corn. Well, do try this simple and wonderful snack.
    Crispy Apam Balik (Crispy Pancake With Peanut Filling)
    Ingredients
    Batter
    200 g All Purpose Flour
    100 g Rice Flour
    1/2 tsp Sea Salt
    2 tsp Baking Powder
    1/2 tsp Baking Soda
    1 Large Egg, light beaten
    100 g Sugar
    1 tsp Vanilla Extract or Paste (optional)
    200 ml Water
    Filling
    200 g Roasted Peanuts, coarsely ground
    100 g Cane Sugar
    200 g Can Cream Corn
    3 - 4 Tbsp Salted Butter

    Hi I just tried your recipe and..they taste SO GOOD! I am not a fan, but I actually enjoyed them! I left out creamed corn and vanilla though but they are still yummy. This recipe is a keeper. Everyone should try!

    When I tried to spread the batter, it doesn't stick to the pan and it comes together with the spoon. Why it becomes like that? Is it because of the pan? I'm using non-stick pan though. What u reckon?

      The pan is too hot..try lower the heat..it work better with thick bottom pan or crepe pan (the one I used). However, some of my subscribers made with non-stick pan and so far so good. So, give it a try again..good luck!

    Just made these, turn out good and crispy.
    Saw a comment was asking is that possible to use milk instead of water and your answer is not sure because you never try.
    I try to replace water with milk, it tastes perfect.
    Too bad wouldn't make nice as u, maybe I use different pan than your.

      Yes, I had it while I was in Jakarta. They tasted different...Martabak is sweeter, richer with many filling.

      Apam balik is different with terang bulan ,terang bulan is sweetie and apak balik not so sweetie

    I prefer your recipe that uses a bit of rice flour as well. And only 1 egg n uses vanilla extract. Great. This is what I had on my mind.
    I used another recipe that used 2 eggs and no rice flour. No vanilla extract too.
    It turned out really delicious but I prefer it crunchy especially on the sides n thicker in the middle. My recipe was more softer n moist and had the smell of egg which I don't like. Maybe next time I will try your recipe.👍🙂

    Hi i taste abit of bitter tatse with ur recipe do u know why? and i have a brass pan like the original mould, however it is always hard to remove from the pan, mmm? Any tips

    hi, is it necessary to let the batter rest for 2-3 hours? why ? 1/2 - 1 hours ok too? If i mixed all the dry ingredients first then add to the wet ones, does it come out ok too? tq

      Yes, you can try an hour too..(let the gluten rest), The longer you let it rest, it will improve the texture and flavor. You can try mix the other way round, let me know how it turn out. Thanks.

      Hi, thks for yr reply. I did it on 1 hours time as my son was going for his class but the batter was thick and sticky type. It did not turn out well as expected when i did the first try. So i added water. (on top of the 200ml of water) as you indicated. What went wrong? Do i need to beat it very well ie. with a mixer in the earlier stage when adding eggs (liquid) into the dry ingredients? .I did not add the flour bit by bit (as yr video) but I added all dry ingredients to a bowl then add to the wet ones (like doing cake). was that a reason or something else or i did not beat the batter enough?

      The batter should be fairly thick and if you find it a bit too thick then just add a tablespoon or 2 but not too much. It's important to let the batter rest, then the batter texture will improve/soften.

      Sorry they didn't turned out so well for you. However, the pancake should be crispy..did you let the batter rest for 3 hours? Maybe pour less batter into the pan? Hope these help..I hope they still taste good :-)

      Try lower the heat, oil the pan and pour the batter evenly. Hope this help.

    I try it with flour combination of APF (200g), Rice flour ( 120g) and corn flour ( 3 Tbsp) and the liquid portion with water ( 200 ml) & egg ( 2 nos). but the batter seen like a bit thick although rest it for around 1.5 hrs ..Final result, not so crispy although add in more rice flour / corn flour ( which give the crispness ) ..kindly advice

      The batter is too thick. The water should be equal or higher in amount than the total flour. Say if your flour is 300g, you should use at least 300g water. Have a look at other crispy pancake recipes here on CZcams. One look at this pancake, I noticed it isn't crispy. When the pancake in this video was being folded, you can see that it's elastic rather than crispy.

      Visually in the video, the amount of APF added appears to be less than 200g. Amazing that no one else outside your comment, remarked on the incorrect amount of water.

    This crepe is both high carb and high sodium and should not be eaten too often. In other words, it may taste good, but it is not good for you.

      I made it 50% less sugar, no butter and sweet corn. I used brown sugar instead. Turn out to be the same crispy.

    Thanks but we don't like this type. This came out after they increased the price but reduced the batter and ended up closed down Apam Balik in Penang. We have to wait for 15 mins for it, but due to too greedy -- to profit more then closed down.
