    Thank you so much for this. I'm hoping to learn to make poi. I've eaten taro as just a steamed vegetable and enjoyed it, but poi is a whole other proposition. I love fermented vegetables so I think I will enjoy the fermented poi probably more than fresh.

    Why is that pa'iai so elastic like flour dough? Is it because of the varietal of kalo used, the Mana Keokeo? Because some pa'iai is more like mashed potato consistency and not like flour dough.
