thank you.
Wil! Can i ask what's the background music playing? I would love to know coz its so relaxing
Tip from an Indian: Crushed coriander seeds (usually crushed between our palms) give more aroma to your dishes and don't get stuck in your teeth. love your work btw. 👍 👌
Great tip! Will have to keep this in mind 👨🏻🍳👌🏻
Wow, thanks for replying, you will also love the sub-cuisines from Central Indian, south Indian (All 5 states), West-Indian (Maharashtra and Goa), North West(Gujarat, Rajasthan) and north-east(Seven Sisters) and far north(Jammu Kashmir, Ladakh, Himachal, Uttarakhand) Indian dishes too, They are amazing. Most of the Indian food they serve outside of India is Northern cuisine only. you will never run out of Indian dishes. Would love to see you prepare those in Vegan version. 😊😊
Thank you.
you can slit the eggplants and rub seasoning like salt and turmeric and let it sit for 20-30 mins before cooking, this will draw our some excess water which can be discarded, this will make the eggplants taste more prominent and better textured too. This is an awesome recipe on its own though, I am really feeling inspired by this.
Thanks for this tip about slitting the eggplant. I was just saying the other day I need another eggplant go to recipe in my arsenal. This one looks like it is a winner.
What does the tumeric do?
Sounds delicious 🙌🏻
@@sunlight8299 Indians add that to almost everything savoury. it adds a base flavor and color typical to Indian curries, though too much can get things bitter.
It has a property of getting browning faster in stuff while frying too.
I will try adding turmeric the next time I pre salt the eggplants. Thanks for the tip!
What I love about this channel is... No bullshittery or exaggerated vibes. Just pure passion, skills and knowledges!
I've tried many dishes from him already, and everything works really well and so versatile.
No, fancy ingredients or complicated things.
Thanks Wil!
As an asian myself this dish won't complete without fresh cooked rice, lol.
Those are such kind words and happy to be cooking together 🙌🏻👨🏻🍳
For real. No cooking channel comes close to Wil.
I am here to get my Wil dose for the weekend. Having said that, who likes the fact that in Wil's kitchen there are no carcasses on the menu, no blood oozing and staining his state-of-the-art chopping board? The kitchen is tasteful, clean, and organized. His voice is level, he gets to the point and he means business when crafting his art. That's it for now because I am off to buy some eggplant. You know the drill: ring the LIKE button like a doorbell, subscribe, and share indiscriminately!
Wil! I have to tell you that this was absolutely outstanding. Due to power cuts in South Africa I had one hour to get this together. It all came together with 30 secs to spare. Sat in candlelight and found this to be so delicious. My decision to make more was my best decision of the year! I love your channel.
So happy to hear you gave it a try and enjoyed 🙌🏻🥳
I hope you realise how important it is for the plant based community that we have access to these excellent recipe ideas Will? I have all your books but it is great seeing recipes made step by step and seeing how great they look when they are complete, Your eyes seduce your taste buds and your dishes are eye candy! Thanks for sharing.
Oh wow! How lovely to hear and happy to be sharing 🙌🏻👨🏻🍳
I only had 1 eggplant and three zucchini’s. So I substituted and it’s delicious. My next try at this will be all eggplant or not. I served this over the lentil rice recipe from this channel, which I absolutely love.
Sounds absolutely amazing 🙌🏻😎
Another awesome recipe Will. Watching you chop veggies is absolutely so satisfying 😍😍👍
I am always amazed how zen you are when preparing your receipes
I am trying to capture all your gestures but I am afraid I am still a little bit hectic 😂
I am 5 minutes away from plating this masterpiece. The house smells like heaven. I know it's going to be amazing. Thanks for sharing this excellent recipe. All my favorite spices and herbs and veg are in this. Thank You!
I being Indian absolutely love eggplant/brinjal and there are so many Indian dishes with eggplants that you can make that are freaking amazing...so thats why i am always surprised to hear that in the West, eggplants are hated by everyone...i will highly recommend everyone to try Indian eggplant/brijal dishes because it wil defintely change your mind and not all of them are spicy..you can make curry or make masala fried eggplant fries/chips or pakoras or mashed eggplant or chutney
sounds delicious
Not everyone 😉
I just made this; only had Japanese eggplant and had no cilantro seeds, but remember my cilantro was all dried out in the garden and went and picked those seeds!! Also did not have green chili pepper, but I don't think it made much of a difference. Having it now over some rice and BAM! What a flavor bomb. May need to get the other cookbook (I only have the ramen one).
This is Amazing! I love it , tasted so good ❤️👍
I just pimped one step, i slized a big aubergine and salted it, left it like that for about ten Minutes.
Then i roasted the slices in the oven till they browned a litte. They taste amazing like that and you don't need any oil.
Thank you for that amazing recipe !
I made this for my family yesterday because this recipe came right at time to save the aubergine that was sitting in my pantry and was already getting a little wrinkly. I had to change the recipe quite a bit, because I didn't have all the ingredients at hand but it turned out quite well and my family loved it. Thank you so much for this great recipe, I will cook it again for sure!
🙌🏻😎👨🏻🍳
I made this tonight and it is perfection. It was my dinner tonight & will be lunch for a couple days, too. The sauce will taste even better overnight, but it was so delicious this evening that I drank what remained in the bowl. The spice heat is right where it should be and the flavors are quite intense. Amazing, as always, Wil.😊
So glad you enjoyed and especially that you can for more than one meal 😎🙌🏻
I need to buy some of those spices first and make that 🌶️ oil step 1.
This is indeed aubergenius and the way you crushed and sliced your garlic was eggcellent!🙂
😁😎👌🏻
You hit all the checkboxes of cooking a great Indian dish :) Looks unbelievably good!! Will definitely try.

the beauty of your dishes is inviting enough but the presentation. explanation and detail of your videos make me lining up each dish to try! Thank you so much?
This was soooo good! Absolutely loved it!
We did add a cup French lentils for texture. I think that red lentils would be good too, just not cooked as long.
Thank you so much Will for your recipes! Cheers to you!
i was thinking adding some cooked chickpeas would be nice too.
This was delicious. Thank you so much
Jewels on a plate. Beautiful. Thank you for sharing.
🙌🏻🙌🏻🙌🏻
That pantry though ! Everything to size and labeled ! I love it !
I love how authentic the sauce base is and how elevated the rest of the dish is! Soo making this!! ❤❤
😁🙌🏻 Happy cooking
I'm not really an eggplant fan but after seeing chilli oil dried chili whole chilli and fresh chilli I had to try. This is the definition of coziness with melty eggplant and warming glows. No doubt I will take this camping to share around a campfire on a cool winters evening. I suspect this malasa would work well with almost any veg and is now delightfully on my weekly rotation!! Thank you so much!! 🙌
Wow! That a wonderful dish to enjoy while camping 🙌🏻⛺️ Keep well and happy cooking
You got me on the coconut cream at the end. Beautiful eggplant recipe. I like the way you cut the other veggies, makes sense to cut them bite size so the fork can pick it up easily. This I can eat with egg noodles for Diabetic like me; otherwise good with pasta or steamed rice.
This is lovely! Thank you for sharing this wholesome recipe.
🙌🏻🙌🏻🙌🏻

🙌🏻🙌🏻🙌🏻
Yet again, fantastic recipe! I had to tone down spice for my SO…. No chili powder and have yet to make my own chili oil (!!!). I used dried Arbol for the dried chilis and a whole jalapeño, so maybe that gave it more of a kick. Used regular eggplant sweated and simmered it well towards end of recipe. So lovely the bell peppers and eggplant vibrantly coming together! Already asked for cookbook for holiday this year. 🔥🔥💙
I will make it this week! Thanks for sharing!!
🥳🥳🥳
That was really good, hearty and warming on a cool autumn day. Thanks a lot for the recipe!

🙌🏻🙌🏻🙌🏻
This does look awesome, and I appreciate that it uses the kind of small eggplants that I can find here in Korea. Yay!
🙌🏻
That looks good. I gotta try it with cumin powder instead, I don’t have cumin seeds. But there’s no protein, so I’ll add chickpeas or red lentils.
🙌🏻🥳
Looks incredible! Another awesome recipe. My farmers market has small eggplant too….great timing.
👨🏻🍳👌🏻
