  • Part 2 Washed or Wet Process. For Wet process, the freshly-harvested coffee cherries are de-pulped using a depulping machine. The fruit is removed, leaving a sticky mucilage that is removed by soaking in a tank of water for 24-36 hours. The coffee beans are then washed with water and air dried in a room temperature. These coffees are typically clean which removes the skin and most of the fruit around the bean. The coffee then is placed in tanks where it is allowed to naturally ferment for 18-24 hours.
