      Thank you very much. It helped me a lot to understand the processing of coffee.In fact, these workers work very hard to enjoy 1 cup of coffee!!!
      after the extraction of the coffee..I personally mix it with soil for the flowers..
      it becomes a fertilizer and is also a sign of respect for the workers..give it to all your friends

      Hello Shaik. We use a dry milling machine which can also be used for washed and honey processed coffees. Some can only mill washed coffees, but many can mill all three types. Rice mills also work to a degree. After milling, there are many more steps to separate and sort the good green beans from the outer layers and underdeveloped beans.

    위 영상은 발효가 아닌 세척의 한 부분 입니다. 내추럴 방식은 커피가 좀 더 익는다 할까요?
    기본적으로 커피 발효에 대한 부분을 모르고 있군요.
    커피는 열처리에 의한 급속 발효와 저온에서 천천히 하는 발효 두 가지를 겸비해야 합니다.
    먼저 세척 후 40-42C정도의 열에서 12시간 이상 지속해 효소를 증가 시킵니다.
    이 효소는 오래된 파치먼트를 갈아 이용 할 수도 있습니다.
    이 상태로 자외선을 피하면서 2주간 바람과 함께 말립니다.
    습한 상태가 지속 되면 백화 현상과 커피비틀이 생길 수 있으니 주의 해야 합니다.
    (반 투명 지붕이나, 아침, 저녁 햇볕을 이용 할 수 있습니다)
    이후 어느 정도 건조 되면 파치먼트 상태로 2차 발효를 시작 합니다.
    먼저 65도 정도로 살균을 하여 효소를 선택 합니다. 살균은 부패 균을 죽이는 효과도 있습니다.
    특정 효소를 이용하지 않는 경우는 다시 파치먼트 가루를 이용 합니다.
    이 경우 습하지 않은 스크린에서 한 달 이상을 발효 시킵니다.
    발효는 효소의 종류 또는 첨가물에 의해 달라지나 위에 명기한 내용이 기본 입니다.
    제대로 발효된 커피는 지금까지 최고로 유명해진 모든 커피를 능가할 것입니다.
    사실 대부분의 유명 커피는 기후, 지형에 의한 발효의 결과였습니다.
    참고로 저는 시벳커피 연구가 입니다.
