  • This time I decided to make a completely different video, so I decided to go through the comments on reddit. I found so many rude and offensive comments, but I focused on constructive criticism and tried to explain my point of view!

      I think your channel is great. There are a lot of idiots on social media. I enjoy your channel because you're knowledgeable and enthusiastic about food. Tbh , I enjoy more videos about making food rather than reaction videos but I understand that reaction videos are more popular! Keep up the great work in encouraging people to eat nice Italian food ! 😂😊

    I literally don't understand how anyone could hate or be rude to Vincenzo. Even if you disagree with his style, recipes, or opinion, he is seriously one of the most loving, genuine, understanding, polite, interactive, positive and encouraging chefs and social media giants I have ever come across. I feel like he is my big brother, and in my heart, he is.

      He's humble, that's what I noticed the most about him. He doesn't pretend to be the world's best chef, he shows where he learns from others himself... how many chefs do you know that are like that? They are stereotypically pretentious, but Vincenzo isn't. For example the videos he did with a far younger dude from Italy that, because he was explaining his Nonna's recipe, Vincenzo just went along with everything the guy said... why? Because the recipe came from a legitimate Nonna from Italy and Vincenzo knows not to argue with that level of expertise (generations of cooking).

    Vinny, my man, never get dragged into a reddit thread. You make delicious simple food, and when I was in Italy that's what the food was. Learning about real Italian food has been a great joy and you've changed my cooking for the better. Keeping making real Italian food and teaching people that the American version of Italian food is not authentic Italian food. You saved this American.

      So, I'll just say and ask you to maintain the standards. IF people sook, then they're not worthy of what the standard should be, for the food descriptions and expectations for what comprises the ingredients, the cooking the techniques et all..... This is all critical for the definition of the dish you are presenting to us.
      Is this a problem??? Well, its a them problem..............it NOT a you problem!

    I work at an Italian resto in Buenos Aires, the owner Is from the North of Italy and he is just like you, he defends the real Italian food, he has so much respect for the recipes, the ingredients and the way to make them, that remind me of you. The vast majority of criticisms are written by people who not only are not Italian and have never been to Italy, but most likely do not have the slightest idea of ​​what cooking (for real) means in general... and in my opinion, the Italian cuisine is particularly difficult to master: you need to know how to work a few high quality ingredients in the best possible way, with very precise steps that leave no room for "interpretation". A small mistake can ruin the whole dish. Vincenzo is an exceptional chef, and knows how to best present traditional Italian recipes (especially from central Italy, Abruzzo, Marche, Umbria, Lazio, Tuscany, Romagna)

    Reddit sucks Vincenzo, I would suggest staying away from the platform altogether! I don’t need a chef to teach me how to cook beautiful Italian food. I need an Italian home cook. That, you are. And you spread the love of the food. Thank you! ❤
    Edit: I am a single parent! Why would I bother? Ha! Because my son and I are eating a much better meal than Kraft Mac and Cheese! And it’s cheap and delicious, even though I’m buying more expensive pasta (La Molisana 😋). 🇮🇹

    The ‘you don’t need to be a chef in order to cook good food’ is absolutely true. I’ve been lucky enough to have many amazing Italian meals in Rome, Florence, Venice and Cinque Terre, mainly in local Trattoria type places.
    But the best meal I have had in my life was Chicken Cacciatore cooked by an Italian friend in the U.K.
    They are a Personal Assistant in a Hospital never professionally worked as a chef or cook ever. Chicken totally melted in the mouth and was the best chicken I ever had.
    Found this channel afterwards as wanted to level up my cooking skills and product knowledge also bought an Italian cookbook. My skills and competence has certainly improved.

    I can’t stand it when people say “this person doesn’t have any kind of professional culinary background education”. Go try telling that to all the Nonnas. Plenty of people know how to cook amazing food just because they love to cook and love to learn how to make delicious food and have plenty of experience under their belt. They are probably the same kind of people that think Giada‘s boobs have a culinary degree.

      One of my favorite things when I lived in a huge city was to treat myself every Sunday to a meal out at a random hole-in-the-wall restaurant, usually run by some auntie or uncle probably without a lick of formal training in his/her life. The food was usually good! Making good food for family, neighbors, and friends following grandma's recipes, tested and tweaked for possibly dozens to hundreds of years with thousands of days of feedback, is going to produce more good cooks than the average cooking school diploma.

      The top chef's making Italian food *got it all from* the Nonna's. Decades of trial and error. I'm so passionate about it because my own father used to cook bolognese sauce and make curry for 25 years, as his child I ate it every time he made it and I noticed it only ever got better and better every time. That's not something anyone can teach, it takes years and years of cooking yourself to realize how to cook. The Italian Nonna's rule over all of cuisine worldwide. Maybe they don't realize it but that only cements their position as the world's best chefs.

      A chef is the one who is in charge of the restaurant kitchen. A line cook isn't a chef. That's just what the word means and why people are so sensitive about it. Because it's a title that's hard to earn. It's also a completely unnecessary to teach home cooking so yeah...

    Yes, growing up as an Italian female, we are taught by nonna and mamma to make pasta before the age of 10. I use to make carbonara with scrambled eggs from a young age. It was too expensive for peasants. Eggs were sold to buy other staples which could not be grown. In the wealthier cities such as Rome it is logical they would be more inclined to add the scrambled eggs to the carbonara.
    My mother being dirt poor for generations would skimp on eggs to this day when making pasta. We still fight to this day about how much eggs to use when making homemade pasta. If she had it her way it would be just flour and water. 😮
    From a young age I rebelled against the peasant mentally and included scrambled eggs in my carbonara. If I can't add them into the carbonara then for what reason do I need to reserve them? Eggs are no longer a luxury for the majority of the population. I no longer need to sell my eggs to buy some olive oil to drizzle on my veggies.😊

      I still do finely chopped and saute my sofrito but now add Passata to my slow cooker instead of a pot for my Bolognese once everything is prepared traditionally. I always sear my meat before putting it in a slow cooker.

    Some of the best chefs in the world weren’t trained in a school. And many famous, award winning chefs say it isn’t needed for every chef. It’s about experience and technique and passion! You keep doing what you love! We love your talent and you sharing your recipes, opinions and humor!!!

    An Italian here. You are a GREAT cook, educational, & like my uncles, from Italy - EXTREMELY FUNNY! I understand Italian humor, and also understand that ppl can take the Italian attitude towards Italian food (The BEST that God ever created) as arrogant, among other things.
    Non-Italians do not understand. You must get inside the thought process of Italiana. If you don't, you have lost a very special gift. This "gift" stays inside your head, popping out unexpectedly - when you need a good laugh!
    Listen up! Vincenzo & good, Italian food cooked under ITALIAN LAW, that every Italian has learned by family before them, will be the healing medicine that will save your life! So, NONGE YOU make Vincenzo suffer like this no more!!!

      Neither did I. It would be a turn off to me. I think he’s quite charming in his reaction videos. I learned a lot from his videos and am happy I found this channel. In fact I have a Bolognese sauce in the planning for tomorrow, which improved for the better thanks to Vincenzo.😋

      I wouldn't say rude, but I feel that in some of his reaction videos, his comments can border on mean-sprited/condescending, despite the somewhat light demeanor he portrays. I stopped watching those videos but enjoy his other ones. In the eye of the beholder I suppose, from here it seems clear that most fans disagree.

    Some people just like to troll others. Most complaining about you never even gave examples, they just call you names.
    Keep up the good work. Would love to see more Italian foods without pasta or pizza.

    Vincenzo! Don't ever change, you are always fair and kind and wanting to put a smile on people faces with your cooking and videos. Your videos are easy and fun to follow. I may not be an expert on Italian food to criticize but my Italian girlfriend is a true culinary maestro and she put me onto your channel and through both of your teachings I've been able to make dishes which is a real blessing! I just ask for one thing... how do they put the coffee in the pocket???

    This little Eskimo made it all the way to Rome. We took a real Italian cooking lesson and enjoyed an unforgettable night looking over Rome. We made pasta both ravioli and linguine with sauce using Guanciale for the sauce 😍 watching your videos and making your true Italian recipes brings me back to Italy every time!!     As a retired chef, I love your channel and your food. I havre learned a lot from you presentations. As far as you making fun of some of the material out there on line, you are gentle compared to when I was a chef. Keep doing what you do. It is wonderful. When I was a chef I would tell critics "You don't tell me how or what to cook, and I won't tell you how to go outside my kitchen and f### yourself." Bravo Vincenzo!!!!!!!!

    Vincenzo, you are amazing brother. One of the bad things about social media and platforms like Reddit is that cowards can hide behind them, while spreading hate and frustration. Since they do not seem to have anything else to do with their lives, they go out try to ruin others. I love your recipes and because of you, I learned a lot of stuff I did not know before.     My husband tried your pomodoro a few years back and we've been hooked ever since. There's always at least one of your recipes in our weekly meals. They're cheap, easy, quick, and delicious.     I was born into an Italian family, and Vincenzo’s Plate is one of the few channels that authentically captures and elucidates Italian cuisine. I recognize all the recipes and techniques my grandma used back in Italy. There's no doubt about it. I would completely dismiss any negative comments. You are a true ambassador of Italian cuisine and deserve immense credit for your work.

    Vincenzo, your channel made me fall in love with italian food. I used to like pasta and italian recipes but you made me want to make great italian recipes and what your channel has taught me is that great italian food is simple. Your bolognese video is prime example of that. Let the ingredients shine, dont overcomplicate. I thank you for that. I will admit one thing though. I have been following you for a few years now and if i have one criticism that i can see got worse through the years is that i find that in your reaction videos you seem to assume that everyone watch your cokking videos and that they should know better. Im not a big fan of reaction videos because i think its way too easy to just shit on someone's work without context. Its easy content to make and its really easy to just fall into degradation, and i do see you do it sometimes. Appart from that i love your content and keep dishing out the great recipes and awesome tips!

    CZcams has a background of deleting comments themselves or at least not show them because XYZ. There's no real explanation to this (to me), I just wanted to comment that, that this is not particular your fault. But not all viewers don't know that

      Yeah, the YT censorship is getting really tight. Many comments get automatically deleted within 1 minute. Sometimes, it's hard to write a comment (on certain topics) that will get through because the algorithm gets triggered by this or that word or phrase. It's insane.

    Hi Vincenzo I’ve always found your recipes so good and it’s changed my cooking for the better . You’re obviously very passionate about your cooking and you always strive for perfection and you also use humour which is great. There is absolutely nothing wrong with that. Every time I’ve responded to your recipes you’ve always responded and for that I thank you. To me that is the mark of a gentleman. There are always going to be nasty people out there and that is life. Do not let them upset you. You have far more respect than nasty critics .

    Haters gonna hate. Some people think that your reaction videos are throwing shade on others and fail to realize that you are teaching the right way, what is authentic, etc. I see this on other cooking channels I follow. Ignore them.

    Vincenzo, there will always be critics out there and I think you handled this video beautifully. I think what people fail to understand is that cooking is an expression of love. Your videos, and authentic recipes are exactly what they are supposed to be, Authentic. Some people need to understand that authentic recipes are a great starting point. Keep up the good work, Happy Birthday (I think you said you just turned 40), Love the recipes, and I'll see you in June for the tour.

    I alswys love it how americans defend kraft mac and cheese with such passion :D Going after vincenzo saying hes wrong about their 3$ plastic noodle and artificial cheese glue and how properly made mac and cheese is 30$ lol... If you spend 30$ making mac and cheese you really messed up somewhere real bad... And i also fulyl disagree about comments of him being arrogant or bullying people... That has never ever happened. Constructive criticism and pointing out what they did wrong in terms of cooking steps etc. Vincenzo is passionate about food and is teaching us how to elevate our favorite italian recipes. What i value most about him is that he is a diehard purist. Many old recipes are being brutalized by tv chefs and youtube chefs. If a lot of people start using those recipes the old original recipes will eventually die off

    I do find he has been overly judgmental about how someone makes a dish when he does a reaction video. Those judgmental faces, expressions, and comments come off as being off-putting to me. Dishes don't have to be exactly made the way he is familiar with. Food nowadays have been a fusion of different cultures and different ingredients within one's budget. I wish he would just tone down the rudeness of his reaction videos.

    I absolutely love your content most times, especially your recipe videos! You have definitely taught me quite a bit, and that's so appreciated - especially as an American with Italian heritage. I think where people get turned off is sometimes how strongly you react to certain things. You have to understand that, often, Italian-Americans (especially today's generation) are just doing what they were taught by their predecessors who were, themselves, sometimes a generation or more removed from Italy. Culture shifts over time based on many things, including necessity. But people in the USA are very, VERY proud of what they feel is Italian culture. And I think, to that one commenter's point, there's often room for both. And that's what I love about your videos that aim to truly teach these points gently - you can show that while their way may not be the traditional way, that doesn't mean it's BAD - just that it's inauthentic to how things have been or are currently done in Italy. For example, I grew up going to my nonna's house every Sunday and having meatballs and pasta with a red sauce. This was a recipe she got from her Sicilian mother and adjusted to her liking. It would not at all be considered an authentic sugo, but it's delicious.
    The reason I love your channel is because, although I learned to make things like carbonara or alfredo from American recipes (not my nonna's), I didn't know any better, so learning the actual authentic recipe has made me feel even closer to my heritage. That doesn't mean I'm not proud of the things which make me an Italian-American, as well. I think sometimes your classic Italian passion can get misconstrued, so a gentler delivery may sometimes be helpful. Recognizing that just because something isn't authentic doesn't mean it's not good has helped me, too. The American take on Carbonara, with cream and peas, is still very tasty - but I agree, it should be called something different (and it certainly doesn't hold a candle to ACTUAL Carbonara). But people shouldn't be punished or flamed simply for not knowing. That's why I like your educational stuff more, but I get a kick out of your reaction videos, too - it's just that sometimes people can feel like it's gatekeeping.
    If a dish is tasty, and prepared WELL, then to each their own. So a gentle reminder that it shouldn't be called "authentic", or a gentle education on what the authentic recipe actually *is* should be all people need - and you do that most of the times. Keep it up, ignore Reddit, but keep in mind that most of the time people aren't purposefully trying to deface or degrade Italian culture or recipes - they simply don't know better, and that's why it's awesome that you educate them!

    I’ll chip in and also thank you for all your recipes AND reaction videos. I’ve learned a lot and keep a file of all the recipes I love. My only comment, which I’ve tried to say before, as an Italian-American, sometimes I get the feeling you don’t understand that our American versions were born out of a “poverty” of ingredients. Italian immigrants to our country were trying their best to recreate what they cooked in Italy, but were very limited. There is a long tradition now in this country of Italian-American cooking. You can consider them a “dialect” of Italian cooking, as in Italy, regions have their own versions of the “same” recipe. Many of our home-grown versions are actually very good, but not “pure” Italian and shouldn’t be evaluated in comparison to traditional recipes.

    I have made several of your recipes and they are so good that I even prepared them for my family and everyone loves them. Your videos on how to choose the best extra virgin olive oil , pasta, tomato sauce etc, have been so helpful, especially the olive oil which can be so expensive.     I have a few favourite food channels, French Cooking Academy, Latifs Inspired (for Indian food) and Vincenzo’s are among them. They all have something in common, they adhere to traditions, and they have a very good way of conveying the important stuff in cooking, that is, not just the recipe, but things as consistency, temperature and all those things that can’t be explained in just words. I can see how hot the pan is, the colour of the onion, how thick the sauce is, and this is something a lot of other channels are missing. And above all, they all have a pleasant tone, a humble attitude and Vincenzo in particular is damned funny too.
