    Gonna have to make some of this.
    BTW... my 8 yr old is addicted to chaffles now. He went to his Nana house yesterday and she called my wife asking what these chaffles are that he keeps talking about. He had her put the egg in the waffle maker and a piece of sliced cheese on top. It was a mess. I about peed myself when she told us what happened ... 🤣

    This brought me down memory lane. In my HS cooking class, we made home made ketchup! We put fresh or whole spices in a cheese cloth made of thicker material like those brown sacks, and let them simmer in the sauce. The ketchup turned out so delicious! I was so impressed with my teacher! I thought she was a God send genius (she was!). I also remember how graceful and always put together she was! Thanks for taking me there, Steve!

    I've been using Chef John's recipe, but just skipping any sweetener. Originally I did add some stevia drops, but found that I just didn't need it since there is already sweetness from the tomatoes. One change I made was to reduce it quickly on the stove instead of using a slow cooker like Chef John does. Works just fine.

      I completely agree! It's sweetened with stevia instead of sucralose but a bit on the expensive side. Steve's recipe is one I will definitely try👍

    Love it, Steve! The sugar free ketchup from Heinz is made with sucralose, which I try to stay away from, and Primal Kitchen's is too expensive. This will be perfect!

    I stopped using xanthan gum years ago because it really makes my husbands UC act up
    We use Glucomannan powder (same stuff miracle noodles etc are made of) and have had nothing but success with it, and never gives that slimy mouthfeel that Xanthan can give and no gut problems either.
    Also with any of the thickeners you can mix it with some fat, butter, coconut oil, whatever and it will then dissolve easily in whatever you are making.

    Great idea to make it with allulose! This is almost identical to the recipe I've been using for years, only I use 12 oz of tomato paste to 1 cup of water, a little more sweetener and salt, and add a pinch of cinnamon. It needs only a few minutes of cooking just to bring the flavors together, and since it's already pretty thick, I don't need to add xanthan gum.

      @@SupermanNew52 Because Splenda in the yellow bags is around 98% maltodextrin and 1-2% Sucralose. The issue is that the maltodextrin can cause glucose spikes and in sufficient quantity, affect a person's ketones.

    I'm 65 next month and Mom made homemade ketchup. Oh the wonderful aroma as it simmered all day!! (From garden tomatoes that she peeled & strained herself). Talk about a lot of WORK!! 😍 especially for a bunch of kids to gobble up. 😁 But we all still reminisce about that delicious ketchup that NO other can match. ❤

      hi Aimee, no ketchup is sugar free..(boo!) is my have 'no sugar added' or 'low sugar' but tomatoes have sugar so....that's why it has sugar even if you don't add any sugar....

    Love this recipe. I made homemade ketchup and bar-b-que sauce back in my hippie days. Also, take about a half cup of ketchup & add 1/2 teaspoon to 2 teaspoons of my favorite liquid hot sauce. Love your channel, and thank you!!!

      I really love the Modernist Pantry perfected xanthan gum. It's so nice to have thickener that doesn't require an immersion blender. It's great when you want to thicken a sauce that has something else in it that you don't want to blend (meat, veggies, etc.). You can just sprinkle it on and stir. Unfortunately, I have a huge, unopened bag of xanthan gum from Anthony's. I may have to put that in a give-away.

    I doubt I will be making this. I'm too lazy and I don't use ketchup enough. I'll just buy sugar free. Also, I can't get allulose in Canada.
    I did like the idea of cutting off both ends of the tomato paste. That's such a great idea ! I can't believe I never thought of it after all these years of trying to scoop it out with a spoon. More people should know this

    I've been using the Heinz no sugar ketchup, but it does not match my favorite which is the real sugar sweetened Heinz. I will be making this soon. Thanks Steve

      This isn't as sweet as "real" Heinz (which would be far too sweet for my keto adjusted palate). However, I think if you used BochaSweet instead of allulose, you could probably get it pretty close.

    Hand made Sugar Free ketchup! Thank you! The xanthan gum gets horrible slimy; I use it, but I cook my sauce thicker, because we are all victims of the idea our ketchup should be just barely pourable. And, I love that you reuse your bottles. Thank you for this. I'm making scrambled eggs for breakfast, and I'm the crazy nut that puts ketchup on them, but BBQ sauce on my fat dogs.

    I like removing both ends of the tomato paste. Doing so makes it easier to use only the amount you need. I do the same with canned dog food.
    I have been making ketchup with one can tomato paste, two 8 ounce cans tomato sauce, 2 Tbs vinegar and 1 Tbs allulose. I use ketchup mostly in meatloaf. I think I’ll try adding the spices the next time.

    My Mom showed me a trick to getting things to incorporate easily into liquids.
    She said to mix the (cocoa powder) with the (sugar) and then add it to the liquids. (Sugar) melts/ liquifies immediately and the (cocoa powder) will go into solution evenly, like a dream. It works!
    Same principle as the xanthan gum & allulose we see here. In case you (I) have not bought that brand right now.
    Works with any powdery ingredient.
    Just an FYI I learned from the best cook ever, my Mom ❤️.

    Hi. I followed your recipe pretty closely. However, I didn't have any allulose so, considering the beneficials in the macros, I opted for 6 small dates. I also added 1/8 tsp cinnamon and allspice (per my mom's traditional recipe). I combined everything in my Vitamix and ran it on high for 5 minutes, which cooked it well, as one can do with soups and sauces. The batch filled a 14 oz jar and my carb macro per 1 tbsp serving is approx 4 net carbs. A fair trade off for the contributions of other micro nutrients, I think. Might seem a bit "dirty" but totally worth it! Thanks for the encouragement 😎 ps: I used my homemade apple cider vinegar but any would do (but never white distilled vinegar, which I consider to be a highly processed food).

    Good recipe, but I don't use much ketchup so I will probably just stick with bottles of G Hughes and AlternaSweets for now. I do use ketchup to make cocktail sauce for shrimp by adding some horseradish though. Thanks for posting!

    Thanks just made this but with Boca Sweet, I haven't been using it so had to use it up , a bit pricey to let it sit. I did 1/3 cup but recommend go down to 1/4. So good!

    This looks like a good recipe. I have the Splenda allulose I haven't used it yet I bought it a few months ago but I've been not able to do anything with it because I'm in the process of a situation in my life. But Use the Hughes all the time it's not bad but I would like to try another sweetener instead of sucralose.

    Don't know if the 6 oz tomato paste has different size top and bottom. But the 12oz cans do. You can cut both the top and bottom with a side cutter. Then put the smaller one in the larger end and push it out like a hypodermic.

    Thank you Steve. Gonna make this, guess that would require me to make some keto fries!! I would like to see some keto channel make and market a clean keto drink like Ensure. As a senior citizen I need to get more vitamins and nutrition in my body but all the ones on the shelves not have some nasty ingredients in them if your doing clean Keto way of eating.

    UPDATE: made 2 batches of this. So far it's the most convincing homemade sugar free ketchup recipe I've tried but way too much garlic and onion that doesn't taste like traditional ketchup. I like to get the real thing and taste it side by side when I'm doing a new recipe. Next time I will cut the onion and garlic powder to 1/8 tsp each and then taste it against the real sugar version of Heinz or whatever brand.
    Also, one batch I made with just allulose. One batch with half allulose and half Lakanto erythritol/monk fruit sweetener. Both are equally good in my opinion and it's a little more cost effective for those of us on a budget to cut it with erythritol.
    Next time I will also use hot tap water and less of it and put it in a blender and see if I can get success without cooking it down. All in all a very good and easy recipe. All other homemade ketchup recipes I have tried I wouldn't even be willing to continue with them because they did not taste even remotely like ketchup. But this one does.
    I'm perfectly happy with the taste of the Heinz no sugar ketsup but not happy with artificial sweeteners. If this tastes pretty close, I will be in heaven!
    And just for info, normally erythritol would be a problem because of the crystallization, even if you don't mind the flavor. But because this recipe has a 1:2 ratio of water to sweetener, that is the magic number for no recrystallization. Using distilled water also helps. I've been making pancake (maple flavored) syrup this way for well over a year now and have yet to experience recrystallization of the erythritol, even in the FRIDGE!
    Also using a mixture of allulose and erythritol is an economical way to avoid the prominent erythritol cooling effect.

      @@redhatpat9387 I've done that back before I learned about the water to sweetener ratio needed. Recipes I made still recrystallizef in time, despite using powdered sweetener. But it's never happened at the right ratio, even in the fridge for a couple months

    I make my ketchup with Erythritol instead of Allulose but I do cut down in how many tablespoons I use …Allulose stalls weight loss if you are following strict keto, I use paprika and apple cider vinegar …..I just discovered your channel……Great recipes ……. Thankyou!

    Steve, I have been making my own ketchup too as I enjoy it with the flavors of allspice and clove.
    Get a load of this, I had a moment where I decided to change my recipe as a test. I thought "hey I wonder what would happen if I divided the xanthan gum in half and used glucomannan for the other half"..... instead of a sauce-like consistency, I now have ketchup jelly. Wish I could show a picture .... it also separates leaving some liquid. Tastes great but it is hilarious that the result is gelatinous.

    Reducing the ketchup for thickness is a great solution to avoid issues with the xanthan gum, but just remember, the more it's reduced, the more carbs per tablespoon. Granted, you're probably talking about tenths of grams of carbs in difference but if someone is very insulin resistant and eats a lot of ketchup (I've known people who can eat half a cup of ketchup in one meal) it could knock off their macros. Just be aware. JS.

      For what it's worth, the yield on this as I made it was just shy of 42 tablespoons. I based the macros on 40 tablespoons and it's still .7g net carbs per tablespoon.

    Have you noticed that our kitchens are going back to the 1950s? When we made everything from scratch I make my mayonnaise from scratch I make my ketchup from scratch I make my barbecue from scratch I make my cakes from scratch and I make my pie crust from scratch... So glad my mom taught me how to cook and bake.

    Looks delicious! The only things different i use when making ketchup is a bit of allspice and some cayenne pepper (i like spicy ketchup.) Like you were saying, lots of good variations can be done.

      Yep. I look at this recipe as a "canvas". This is the starting spot from which people can customize. I wonder if just a pinch of Chinese five spice powder would do in place of the cloves....

      @@SeriousKeto I bet that would work great. and even with more adjusting like some chinese xiao xing rice vinegar, soy sauce and some brown sugar substitute it would start leaning towards char siu sauce for chinese bbq pork.

      Allspice is probably closer to real ketchup than the clove flavor. I've tried making ketchup several times and all recipes call for cloves and it really doesn't taste right to me. Real ketchup doesn't have any discernable spice flavors to me.

    Hi Steve. This looks great. I used to use Heinz reduced sugar which was fine. They don’t make it anymore and came out with a stevia sweetened version. I thought this would be the perfect solution. Not so. The vinegar is way too strong. I can’t wait to try this. I’d rather use regular ketchup than the Heinz. Thanks for sharing!😊

      I have the Heinz on subscribe and save with Amazon (I mainly use that as the base for my keto BBQ sauce), so I'll have to see what the new stuff tastes like and what impact it has on my BBQ sauce. Thanks for the heads up.

      You’re very welcome. I really liked the reduced sugar by Heinz. Others may like this new stuff but I can’t even get through a whole hamburger with it. Way too much vinegar for my personal taste. As a base it may be just fine. The way you cook, you’ll probably tweak it and it’ll be just fine! Watching your mayo videos now!🤗🤗

      I've seen numerous recipes for Heinz clones that suggest cumin, cinnamon, cloves, allspice, ginger, and ground mustard as possible ingredients. I haven't seen nutmeg listed, though I can certainly see how a couple grinds of fresh nutmeg could add a nice nuance to ketchup.
