Hi Stephanie, I haven’t made this in the pressure cooker because the pressure cooker needs more water, but the Foodi only requires 1/2 cup so I’d just increase the water amount to that and pressure cook for 10 minutes if using the boneless skinless thighs cut in half.
Tanya, what if you can't find those brands of curry? Is there a combination of spices you can recommend for an approximation?

this take on jamaican curry looks really delicious. I have only one feedback for you and that's at "5:40" where you say you "burn the curry", that's really interesting phrasing. I hope you don't feel like it's burning or those watching feel like they'll accidentally burn the curry, because that process I've heard is referred to is "blooming spices", which is common in curry cooking. It's a small thing and I hope this isn't an annoying comment, but language helps shapes our energy and approach to cooking. You're not burning anything, you're blooming it! :)
Great point. I do a better job explaining the phrase “burn the curry” in the blog post but it’s what my mom calls that method of blooming the spices. It’s important to keep the heat over medium heat so the curry doesn’t actually burn. I also think it’s important to be as authentic to how she taught me, which is why I used the phrase. I could have been more clear in the instructions so thanks for pointing that out.
@@MyForkingLife My husband's family is Jamaican and I am from the Virgin Islands. "Burn the curry" is the common phrase used in our culture for that process.
We say burning curry it’s ok, we island ppl know what it means 🇱🇨

My Family is Jamaican and this is how my mom taught me. I’ve never had Trini curry chicken but I bet it’s just as delicious.
No salt, no pepper no fresh ginger when seasoning the chicken thighs. What going on?
I seasoned the chicken with 2 kinds of Jamaican curry powder, one that has salt as a second ingredient. Since curry powder is a blend of seasonings, it’s unnecessary to add additional salt and pepper during this stage. Ginger is a personal choice but I don’t care for it in my curry.
