Curry Chicken: Jamaican Style!

  • This video will show you the jamaican technique of making curry chicken. Traditionally, other islands with heavy Indian influence tend to toast or burn their curry first before adding their chicken, but other islands, including Jamaica season the chicken with curry and cook thoroughly! It still tastes great!
    I used a 3 curry spice blend for this recipe and these are estimations so watch the video carefully:
    During seasoning for approx 5 lbs dark meat chicken:
    1.5 tsp of adobo
    1.5 tsp maggi chicken seasoning
    1.5 tsp onion and garlic powder
    2 tbsp of Chief’s curry powder
    2 tbsp of Jamaican Choice curry powder
    2 tbsp of Betapac curry powder
    2 medium sized potatoes cut into 1 inch cubes
    1 carrot sliced into coins
    1/2 onion chopped
    4 garlic cloves chopped
    1 tbsp corn oil
    1/2 cup water
    1 scotch bonnet pepper (optional)
    Few sprigs of thyme
    Cooking time: 1 hr 15 minutes

    Interesting as a Guyanese we burn the curry a little 1st n never use carrots … you mentioned using it to thicken but that’s what the potatoes are for … a tip if you open to trying is mashing 2 cut potato pieces into the gravy is how it will thicken

    I made this recipe yesterday and I must say it was absolutely AMAZING!! I added a few more of my own personal seasonings I like to use and added a little ketchup towards the end to make my sauce thicker but aside from that this recipe definitely was authentic and extremely delicious to say the least❤️

    I dont see many jamaicans roasting their curry before, although there are a few that do that. It really makes a difference when the technique is done the proper way, but everyone has a different way of cooking curry so that's cool to see the other types of ways. Enjoy

      That's right! You have to burn some curry before you add the chicken. This seems to be an American Jamaican recipe. I don't know any Jamaicans that add tomatoes. Needs some peppa sauce, salt and black pepper too!

    Looks yummy 💗I make a paste with curry powder and oil. Fry in pan and then add chicken let fry together and add water and last veggies 🥗 🥕

    I use them same brands however depending on my mood, i find Trinidadian curry is more spicy 🌶 than Jamaican however i won’t use that Indian curry it smells different ( you can smell it on people clothing ) and I’m sure taste different. I use a little ginger because some folks can’t stomach curry

    So when I made this recipe I had to substitute with badia and grace curries because that's all I could find where I live, along with a habanero pepper rather than scotch bonnet (don't ask). Let me just say this recipe was good asl. 10/10

      Anna Miller yes you can use coconut milk but not instead of water. In addition to. I use about a quarter cup like i was taught.

    1 pack of curry is ok no need to use 3 different curry powder, Beta PaK curry is number 1 for Jamaican Curry Menu., that's what Jamaicans only use.

      Theres a few different styles whether Jam or Trini or wherever it may be from. Idk all of them but what I do know is some ppl lightly fry the spice in oil first to "seal" it but then some ppl cook it really hot and almost burn the spice I guess she has yet another way to do it....Looks gd af to me.

      Not all jamaicans do it this way. Just like some jamaicans use allspice, coconut milk etc. and some don't.

      I didn’t forget. That’s just not how I usually make curry chicken. Sometimes I burn the curry first and sometimes I don’t. Depends on my mood and to be honest it doesn’t make a difference.
