Chicken Quiche Recipe | How to Make Chicken And Mushroom Quiche | My Recipe Book By Tarika Singh

- Learn how to make Chicken And Mushroom Quiche, an easy to make and delectable recipe by Tarika Singh.
Quiche is a savoury, open-faced pastry crust with a filling of savoury custard with cheese, meat and/or vegetables. It is a part of the French cuisine and it can be served either hot or cold. Check out food blogger Tarika Singh's take on this classic French dish.
Ingredients:
175 gms all purpose flour
1/2 tsp salt
113 gms unsalted butter
2-3 tbsp ice cold water
2 tsp olive oil
2-3 cloves of garlic finely chopped
1/3 cup of leek chopped
150 gms of button mushroom chopped
100 gms of poached chicken shredded
egg wash for brushing cooled crust
For custard
3/4 cup cream
2 eggs
salt and pepper ( for seasoning)
chilli flakes for seasoning
Method:
To make the crust:
- Add the all purpose flour, salt and the cubes of chilled unsalted butter to the food processor and let it pulse until it takes on the texture of wet sand.
- Keep the food processor in the pulse mode and simultaneously keep adding the ice cold water through the feeder tube to make the mixture clumpy.
- Empty the food processor onto the chopping board and gently bring together the clumps into a disc shape.
- Wrap this disc tightly using a cling film and keep it in the refrigerator for atleast 1 hour or in the freezer for about 15 minutes.
- Take the pastry out of the refrigerator and leave it for a couple of minutes before rolling it out into a pie dish.
- Take two sheets of parchment paper and roll it out in between the two sheets. Roll it out into about 11 inches round crust.
- Peel off the layer of parchment paper and turn it over into the tart pan. Carefully lift off the remaining parchment paper.
- Nudge the crust into a pie dish. Trim off the edges using a knife.
- Place parchment paper over the crust and put some baking beans over it. The beans will help the crust to bake partially and it's weight would help to prevent the crust from rising up while it's baking.
- Pre-heat the oven to 200 degrees Celsius and blind bake this crust for about 20 minutes.
- After 20 minutes, pull out the parchment paper loaded with beans and let the crust bake for another 3-5 minutes.
- Take the crust out of the oven and brush it up lightly with egg wash.
- Put it in the refrigerator for about 3 minutes.
To make the filling:
- Heat garlic oil in a pan.
- Add the chilli flakes and chopped leeks and let them cook for about a couple of minutes.
- Add the chopped button mushrooms and cook them until they release the water and the water evaporates completely.
- Add salt to taste and the shredded chicken.
To make the custard:
- In a bowl, add the cream and two eggs and give it a gentle whisk.
- Add a generous amount of pepper, salt to taste and chilli flakes and whisk.
- The custard is ready.
To make the quiche:
- Start layering the crust, first with the mushrooms and chicken.
- The second layer would be of freshly grated parmesan.
- The third and the final layer would be of the custard.
- Drop the temperature of the oven to about 180 degrees and bake the quiche for about 20-25 minutes.
- The chicken and mushroom quiche is ready to be served.

A simple hack to place ur pie crust carefully without a struggle would be to place the pie dish upside down over the prepared sheet and press down firmly.
Takes a little practice but makes it stress free in the long run :)

Thanks so much for this lovely recipe. I've got one query though. Other videos that I've seen about making the short pie crust, almost invariably tells us to perforate the bottom of the pie crust with a fork before putting it in the oven for blind-baking. Is this step really necessary?

Dear tarika I made quiche and baked at 200 degree Celsius temperature and minutes u recommended I did. But somehow pastry got baked only on sides but in centre remain uncooked. What can be reason after blind baking. Reply me thanks rims1

Milk would be way to watery, but you can make white sauce or bechamel that would taste really good too☺️

Prasheel Kelkar Ideally not, because the mixer / blender would give yu very different results, not suited for the base. So just use a bowl and rub the butter into the flour with the tips of your fingers, just the tips because the hand will be too warm and will make the butter melt.
Can we make it without egg?
Forget the beans when baking the crust...just score the crust with a fork ...you know...make tiny holes so the air can escape.....

when i went to convert 175 grams of flour to cups i find that there is no consistency! The first three answers were "almost exactly 3/4 cup" "so 175 is probably about 1 and 1/3 cups" " 1 2/5 CUP" *those are three very different measurements
how come it is so hard to convert? I thought it would be easy!
gentle deer I hear you! That's really why a weighing scale works best. Plus there's the humidity factor or how tightly the bag of flour was packed... all of these make a difference.
+gentle deer I don't look at recipes with non-American measurements. Why? Too dangerous. If it calls for 175 grams, and you put in 173, the outcome could be disastrous.
So I just use regular measurements. A cup is a cup. Could be a little more, or a little less. Who cares? Doesn't have to be so precise. After all, we're just cooking. We ain't performing a scientific experiment.

Chef Pepin don't use no stinkin' metric measurements. In fact, he hardly ever measures anything. But he refers to the amounts he puts in as "about" a cup, or a tablespoon, or an ounce.
I learned how to cook by watching his TV program, and I bought his books. He was good friends with Julia Childs and if I'm not mistaken, she didn't use metric either.
To my way of thinking, all this crap about grams and milliliters makes people afraid to cook. They get out the stupid scale and weigh stuff. They approach cooking like a lab experiment. Afraid they'll screw it up. Nonsense.
I just made a marinara sauce for pizza and I didn't measure anything. Not the cream or the wine or the vodka or the cheese or the herbs or spices. I just toss it all in. And my marinara sauce is to die for. I can it up in quarts and if someone is nice to me, and tells me what a wonderful person I am, I might gift them a jar. Maybe.
