  • My grandmother would top our gumbo with this fried okra. It would take care of those who wanted okra in their gumbo, and those who didn't. I always wanted the okra. I love it!

    Ingredients
10 pods fresh okra- If you would like to use frozen that is fine as well
    1 cup cornmeal
    1/2 cup flour
    1 1/2 teaspoon salt
    1 teaspoon granulated onion
    1 teaspoon granulated garlic
    1 teaspoon paprika
    1 teaspoon black pepper
    1 cup almond milk
    1 tablespoon vinegar
    2 cups oil
    Kitchen Needs
    1 Medium mixing bowl
    1 Small mixing bowl
1 medium plastic or paper bag for tossing okra
    2 Paper towels
    2 Larges plates
    2 Slotted spoons
    1 Medium or large skillet
    Measuring cups
    Measuring spoons
    Directions
    1. Wash and cut okra put it in medium size mixing bowl add 1/2 teaspoon salt, set aside. If using frozen okra do the same.
    2. Vegan Buttermilk- Pour 1 tablespoon of vinegar into 1 cup of almond milk, stir slowly, not to spill set aside for 5 minutes.
    3. Next, pour vegan buttermilk into bowl with okra, stirring. Stirring until it starts to thicken and get slimy. Set aside. Note: This will remove some of the moisture and slim from the okra before frying.
    4. Pour your cornmeal, flour, and spices into your plastic bag shake and mix well.
    5. Take a slotted spoon and remove 5 to 6 pieces of okra from buttermilk, making sure to drain as much of the buttermilk mixture through the slots in the spoon, then toss the okra in the cornmeal bag, making sure they are well coated.
    6. Place coated okra on dry plate let set for 5 minutes, okra will dry out a little and still be a little tacky feeling to the touch. Continue this process till all of your okra is coated. See video.
    7. Pour your oil in skillet, preheat on medium high heat for 5 minutes.
    8. Drop okra in skillet, cook for 3 to 4 minutes, cooking till golden brown. Okra cooks really fast, .
    9. Drain on a plated paper towel.
Serving Suggestions: My family eats two ways. Like, I said above my grandmother topped gumbo with them, the other way was to just pop them in your mouth. Enjoy! You will make a lot of noise when you eat these.

Thank you Sunshine, I have never baked them, but I would suggest changing the recipe by dipping them in panko crumbs, same recipes except exchange cornmeal for panko. Add two tablespoons spoons of oil, to the panko, then dip your okra making sure it is evenly coated. Baked it at 400 for 15 minutes or until light brown and crispy. Let me know how it turns out. If you have any more questions please reach out. 🙂
